  • 2 cups cooked chicken shredded such as rotisserie
  • 2/3 cup mayonnaise
  • 2 tablespoons fresh parsley chopped
  • 1/4 cup red onion finely diced
  • 1/2 cup red grapes quartered or halved depending on size
  • 1/2 cup celery diced
  • 1/4 cup walnuts chopped
  • 1/2 teaspoon kosher salt plus more if needed
  • 1/4 teaspoon black pepper plus more if needed

Instructions
 

  • Mix the mayonnaise (2/3 cup), salt (1/2 teaspoon), black pepper (1/2 teaspoon), and fresh chopped parsley in a large mixing dish (2 tablespoons).
  • 2 cups shredded chicken, 1/2 cup halved or quartered grapes, 1/2 cup diced celery, 1/4 cup chopped walnuts, and 1/4 cup diced red onion To blend, stir everything together thoroughly.
  • Serve on toasted bread sandwiches, lettuce wraps, or on top of a green salad.

Notes

Walnut substitute: Don't like walnuts? Instead, use slivered or sliced almonds or chopped pecans. To make a nut-free version, replace the walnuts with sunflower seeds to keep the crunch.
To make a mayonnaise-free variation, substitute sour cream or Greek yogurt for the mayonnaise.
Change it up! In place of the grapes, use dried apricots, diced apples, or even strawberries in the chicken salad.
Storage: Refrigerate in an airtight container for up to 5 days.

Brunch, baby shower, company picnic, barbecue, tailgating, or holiday breakfast. SO simple and CRAZY GOOD! Make ahead of time and store in the refrigerator.

Ingredients
  

  • 3 8-oz packages cream cheese, room temperature
  • cups sour cream
  • cups sugar
  • 1 Tbsp of vanilla
  • 5 pounds seedless grapes half red and half green
  • ½ cup pecans finely chopped
  • ½ cup brown sugar

Instructions
 

  • Remove the stems from the grapes and wash them. Allow to dry fully.
  • With a handheld mixer, beat cream cheese until totally smooth in a large mixing dish. Mix in the sour cream, sugar, and vanilla extract. Mix on medium speed for 2 minutes.
  • Add grapes to cream cheese mixture and gently fold in until completely coated. Refrigerate until ready to serve.
  • Sprinkle walnuts and brown sugar on top of the grape salad just before serving.

Instructions
 

  • In a large saucepan, combine the chicken tenders and chicken stock. Poach the chicken for 15 to 20 minutes over medium heat, or until thoroughly done.
  • Chicken should be shredded. Using a paddle attachment on a stand mixer, shred the chicken. Shredding the chicken tenders with two forks also works nicely.
  • Place the celery, dry ranch dressing mix, mayonnaise, salt, and pepper in a medium-sized mixing basin. Blend well.
  • Add the shredded chicken and stir up completely. Mix in the grapes, apples, and pecans. Stir until well combined.
  • Serve over lettuce or in a sandwich.

Notes

This chicken salad tastes better if you prepare it ahead of time. Store in an airtight container.

  • 2 Granny Smith apples cut into small chunks
  • 2 cups chopped walnuts or to taste
  • ½ red onion chopped
  • 3 stalks celery chopped
  • 3 tablespoons lemon juice
  • ½ cup vanilla yogurt
  • 5 tablespoons creamy salad dressing such as Miracle Whip®
  • 5 tablespoons mayonnaise
  • 25 seedless red grapes halved

Instructions
 

  • In a large mixing bowl, combine the shredded chicken, apple pieces, walnuts, red onion, celery, and lemon juice.
  • In a second dish, combine the vanilla yogurt, salad dressing, and mayonnaise; pour over the chicken mixture and swirl to coat. Fold the grapes into the salad gently.
