Ingredients
  

  • 1 small yellow onion diced
  • 1 tbsp olive oil
  • 2 cloves garlic finely minced
  • 2 14.5 oz cans low-sodium chicken broth
  • 1 7 oz can diced green chilies
  • 1 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • salt and freshly ground black pepper to taste
  • 1 8 oz pkg Neufchatel cheese (aka light cream cheese), cut into small cubes
  • 1 1/4 cup frozen or fresh corn
  • 2 15 oz cans cannellini beans
  • 2 1/2 cups shredded cooked rotisserie or left-over chicken*
  • 1 Tbsp fresh lime juice
  • 2 Tbsp chopped fresh cilantro plus more for serving
  • Tortilla chips or strips monterrey jack cheese, sliced avocado for serving (optional)

Instructions
 

  • Over medium-high heat, warm up the olive oil in a big pot. Add the onion and sauté for 4 minutes. For an additional 30 seconds, add the garlic.
  • Chicken broth, green chilies, cumin, paprika, oregano, coriander, and cayenne pepper should also be added. Salt and pepper should also be added to taste. Just bring the mixture to a boil, then turn the heat down to medium, and let it simmer for 15 minutes.
  • Measure out 1 cup of beans after draining and rinsing them in a colander or fine mesh strainer. After setting aside the whole beans, add 1 cup of the beans and 1/4 cup of the soup's stock to a food processor, and purée until almost smooth**.
  • Stir thoroughly after adding maize, whole beans, and pureed beans to the soup along with Neufchatel cheese. longer than five to ten minutes.
  • Add the chopped chicken, lime juice, and cilantro. If preferred, top with tortilla chips, more cilantro, Monterrey Jack cheese, and slices of avocado.

Notes

*The recipe has been modified to include precooked, shredded chicken (previously used raw chicken in this recipe and cooked at the beginning). I prefer the taste of rotisserie chicken more, plus you avoid having overcooked chicken breasts this way.
**The pureeing stage can be skipped if you don't have a food processor, but the soup won't be as creamy.

  • 3 tablespoon olive oil divided
  • 2 tablespoons plus 2 teaspoons chile powder *divided
  • 3 tablespoons cumin divided
  • 1 teaspoon salt divided, plus more, to taste
  • 1/2 teaspoon cayenne pepper or to taste
  • 3 cups chopped onion 2 medium
  • 3 tablespoons minced garlic or more if you love garlic 4-5 large cloves
  • 3 15- ounce cans white beans drained
  • 2 4- ounce cans chopped green chiles hot or mild, depending on your preference
  • 2 teaspoons oregano
  • 4-6 cups low-salt chicken broth
  • 6 cups shredded cheese divided (half Monterey Jack, half cheddar)
  • 2 cups sour cream divided
  • Garnish:
  • Chopped scallions
  • Chopped cilantro leaves
  • Your favorite hot sauce
  • Sour cream
  • Shredded cheddar or Monterey Jack cheese

Instructions
 

  • Set the oven to 350°F and season the chicken before roasting it. Chicken should be laid out in a roasting pan. Sprinkle with 1 tablespoon olive oil, 2 teaspoons chili powder, 1 tablespoon cumin, 1/2 teaspoon salt, and a few pinches of cayenne, and season with these ingredients. For 30 minutes, roast. Cut into bite-sized pieces or shred. Place aside.
  • Prepare the chili: Heat the final 2 tablespoons of olive oil in a big pot. Over medium heat, cook the onion and garlic until they are soft, about 5 minutes. Add the beans, chicken, chiles, oregano, cumin, 2 tablespoons of chile powder, 1/2 teaspoon of salt, and 1/4 teaspoon of cayenne (or more, to taste). When adding the chicken broth, add 4 cups and save the remaining liquid for thinning the chili to the desired consistency. After combining, simmer gently for 20 minutes on low heat. (Don't let the pot boil if you want the chicken to stay soft.)
  • Before continuing, remove the saucepan from the heat and let it cool for around five minutes. 3 cups of cheese should be stirred into the pot one cup at a time while it is still at room temperature. After that, whisk in 1 cup of sour cream. (Or, for Dean's richer, creamier version, add 2 cups of sour cream and all 6 cups of cheese to the pot.) Reheat the pot to a medium simmer (do not boil to prevent the dairy items from separating). Add more chicken broth if necessary while simmering the chili for 15-20 minutes. I like to mash half the chicken and beans in the saucepan with a potato masher for a fantastic textural boost. Next, whisk in the remaining ingredients.
  • Chili should be served in bowls with toppings or side dishes.
