This White Chicken Chili is rich, savory, cozy, and creamy. It's a wonderful substitute for classic beef chili and makes a quick but delicious dinner! approximately 8 cups worth.

Cook Time 35 mins
Total Time 50 mins
Servings 6 people

Ingredients

  • 1 small yellow onion diced
  • 1 tbsp olive oil
  • 2 cloves garlic finely minced
  • 2 14.5 oz cans low-sodium chicken broth
  • 1 7 oz can diced green chilies
  • 1 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • salt and freshly ground black pepper to taste
  • 1 8 oz pkg Neufchatel cheese (aka light cream cheese), cut into small cubes
  • 1 1/4 cup frozen or fresh corn
  • 2 15 oz cans cannellini beans
  • 2 1/2 cups shredded cooked rotisserie or left-over chicken*
  • 1 Tbsp fresh lime juice
  • 2 Tbsp chopped fresh cilantro plus more for serving
  • Tortilla chips or strips monterrey jack cheese, sliced avocado for serving (optional)

Instructions

  • Over medium-high heat, warm up the olive oil in a big pot. Add the onion and sauté for 4 minutes. For an additional 30 seconds, add the garlic.
  • Chicken broth, green chilies, cumin, paprika, oregano, coriander, and cayenne pepper should also be added. Salt and pepper should also be added to taste. Just bring the mixture to a boil, then turn the heat down to medium, and let it simmer for 15 minutes.
  • Measure out 1 cup of beans after draining and rinsing them in a colander or fine mesh strainer. After setting aside the whole beans, add 1 cup of the beans and 1/4 cup of the soup's stock to a food processor, and purée until almost smooth**.
  • Stir thoroughly after adding maize, whole beans, and pureed beans to the soup along with Neufchatel cheese. longer than five to ten minutes.
  • Add the chopped chicken, lime juice, and cilantro. If preferred, top with tortilla chips, more cilantro, Monterrey Jack cheese, and slices of avocado.

Notes

*The recipe has been modified to include precooked, shredded chicken (previously used raw chicken in this recipe and cooked at the beginning). I prefer the taste of rotisserie chicken more, plus you avoid having overcooked chicken breasts this way.
**The pureeing stage can be skipped if you don't have a food processor, but the soup won't be as creamy.

What is white chili made of?

The main ingredients in white chili are white beans, chicken or pork (and occasionally pork), and mild green chilies. (Having said that, if you absolutely, positively have to have blistering heat in your chili, there are techniques to accomplish this goal while still maintaining the white color of the chili.

Whats the difference between chili and white chili?

White chili is made with green chilies, as opposed to the red chilies and chili powder used in regular chili, which provides a flavorful basis for the dish. As illustrations of red chili, we would like to direct your attention to our Texas red chili as well as our favorite homemade chili with beans. In this particular recipe for chili, we call for white beans, chicken, and Hatch green chiles that have been canned.

2. White Bean Chicken Chili

White Bean Chicken Chili

We now consider this white bean chicken chili recipe that was given to us by a friend to be one of our favorites. Anytime there is leftover chicken or turkey, make this dish. In order to cook delicious soup, we wish California had a colder climate. The tomatillos can be swapped out for more diced tomatoes. You can add red chili flakes or salsa to the soup to make it hotter. Serve with limes, cilantro, cheese, avocado, sour cream, and tortilla chips as topping options.

To make a cornstarch slurry, combine 1 tablespoon of cornstarch with 1 tablespoon of cold water and whisk the mixture until there are no lumps remaining. After that, incorporate the slurry into your chili, and let it continue to boil for another ten minutes so that it can properly thicken.

Why is white chili called white chili?

This substantial, spicy, and fulfilling stew is a must-have at my home on a dismal, rainy day. It gets its name, “white chili,” from the fact that it utilizes chicken instead of beef and white beans instead of kidney beans.

he pureed bean mixture contributes to the chili's thickness without the need for added dairy. It produces a fantastic soup-like texture. However, you can easily add 4 ounces of cream cheese, sour cream, or even coconut cream to the chili if you prefer it to be extra creamy.
This chili has a good flavor but is not extremely hot. Feel free to add 1/4 to 1/2 teaspoon of cayenne pepper for a little bit more heat.

Prep Time 30 mins
Cook Time 1 hr
Total Time 1 hr 30 mins
Servings 10 people

Ingredients

  • 3 pounds boneless skinless chicken breast halves
  • 3 tablespoon olive oil divided
  • 2 tablespoons plus 2 teaspoons chile powder *divided
  • 3 tablespoons cumin divided
  • 1 teaspoon salt divided, plus more, to taste
  • 1/2 teaspoon cayenne pepper or to taste
  • 3 cups chopped onion 2 medium
  • 3 tablespoons minced garlic or more if you love garlic 4-5 large cloves
  • 3 15- ounce cans white beans drained
  • 2 4- ounce cans chopped green chiles hot or mild, depending on your preference
  • 2 teaspoons oregano
  • 4-6 cups low-salt chicken broth
  • 6 cups shredded cheese divided (half Monterey Jack, half cheddar)
  • 2 cups sour cream divided
  • Garnish:
  • Chopped scallions
  • Chopped cilantro leaves
  • Your favorite hot sauce
  • Sour cream
  • Shredded cheddar or Monterey Jack cheese

Instructions

  • Set the oven to 350°F and season the chicken before roasting it. Chicken should be laid out in a roasting pan. Sprinkle with 1 tablespoon olive oil, 2 teaspoons chili powder, 1 tablespoon cumin, 1/2 teaspoon salt, and a few pinches of cayenne, and season with these ingredients. For 30 minutes, roast. Cut into bite-sized pieces or shred. Place aside.
  • Prepare the chili: Heat the final 2 tablespoons of olive oil in a big pot. Over medium heat, cook the onion and garlic until they are soft, about 5 minutes. Add the beans, chicken, chiles, oregano, cumin, 2 tablespoons of chile powder, 1/2 teaspoon of salt, and 1/4 teaspoon of cayenne (or more, to taste). When adding the chicken broth, add 4 cups and save the remaining liquid for thinning the chili to the desired consistency. After combining, simmer gently for 20 minutes on low heat. (Don't let the pot boil if you want the chicken to stay soft.)
  • Before continuing, remove the saucepan from the heat and let it cool for around five minutes. 3 cups of cheese should be stirred into the pot one cup at a time while it is still at room temperature. After that, whisk in 1 cup of sour cream. (Or, for Dean's richer, creamier version, add 2 cups of sour cream and all 6 cups of cheese to the pot.) Reheat the pot to a medium simmer (do not boil to prevent the dairy items from separating). Add more chicken broth if necessary while simmering the chili for 15-20 minutes. I like to mash half the chicken and beans in the saucepan with a potato masher for a fantastic textural boost. Next, whisk in the remaining ingredients.
  • Chili should be served in bowls with toppings or side dishes.

Where did chili originate from what country?

Every type of chili pepper may be traced back to the Bolivian basin in South America. They may now be found in every part of the earth, and even outside our planet’s atmosphere! Despite the fact that chillies were first documented in the UK in 1548, most people consider them to be a phenomenon that emerged only quite recently.

Is chili powder the same as chili seasoning?

To a large extent, each and every chili spice mix includes chili powder, in addition to a wide variety of additional components. Nevertheless, not every chili powder is included in the chili seasoning mix. Chili powders can be produced from a single type of pepper or from a combination of peppers, and they can be utilized on their own or in combination with other spices. Feeling DIYish?
