- Set oven to 400 degrees Fahrenheit. Place a cooling rack on a baking sheet, coat with nonstick spray, and set aside.

- 15 ounces Great Northern beans drained and rinsed
- 1 cup fresh cilantro chopped
- 8 ounces tortilla chips crushed
- 8 ounces shredded Mexican cheese blend
Instructions
- Warm up the oven. A 400 degree oven is recommended. Spray nonstick cooking spray onto a 3-quart baking pan. Place aside.
- Sauté garlic and onions. Heat olive oil in a sizable stockpot or sauté pan made of cast iron. About 2 minutes after adding the onions, they should be transparent. Spices and garlic may be added.
- One medium onion, diced, one clove of minced garlic, one teaspoon of cumin, half a teaspoon of dried oregano, and one-fourth of a teaspoon of hot Mexican-style chili powder.
- Produce the roux. Flour is added, and then chicken broth is whisked in gradually. Simmer for a while. Cook for about 2 minutes, or until a mild thickening of the mixture occurs. Remove from heat after adding salsa, chicken, beans, and cilantro.
- 3 cups of shredded or cubed rotisserie chicken, 2 tablespoons of gluten-free flour, 2 1/2 cups of chicken broth, 1 1/2 cups of salsa verde,
- 15 ounces of Great Northern beans, rinsed and drained, and 1 cup of chopped fresh cilantro
- A casserole is layered. Sprinkle roughly a third of the crushed tortilla chips in the pan that has been prepared. Add the chicken mixture on top, then sprinkle on half of the shredded cheese before adding the final tortillas and cheese.
- 8 ounces of shredded Mexican cheese mixture and 8 ounces of crushed tortilla chips
- Bake. 30 minutes of baking while foil is covered. Remove the lid and bake for a further five minutes, or until the cheese is browned.
- Garnish. If desired, garnish with tomatoes, avocados, green onions, jalapenos, or cilantro.
