  • Chicken breasts should be placed in a nonporous glass bowl or dish for marinating. Sprinkle chicken with salt and freshly ground black pepper, then drizzle with melted butter or margarine. Overnight in the refrigerator, cover the dish.
  • Set oven to 375 degrees Fahrenheit (190 degrees C).
  • Place potato chip crumbs in a basin or shallow dish. After thoroughly coating the chicken in the crumbs, lay it in a 9x13-inch baking dish that has been lightly oiled.
  • Bake for 45 minutes at 375 degrees F (190 degrees C) or until the chicken juices are clear.

  • 1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch chunks
  • 2 cups low-fat buttermilk
  • 3 cloves garlic smashed
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper optional
  • Kosher salt and freshly ground black pepper to taste
  • 3 cups crushed Sour Cream and Onion Kettle Brand® Potato Chips
  • 1/4 cup unsalted butter melted
  • 2 tablespoons chopped fresh parsley leaves

Instructions
 

  • Set oven to 400 degrees Fahrenheit. Place a cooling rack on a baking sheet, coat with nonstick spray, and set aside.
  • Chicken, buttermilk, garlic, basil, oregano, thyme, cayenne pepper, salt, and pepper to taste should all be combined in a big basin and let to marinade for at least 30 minutes. Good drainage
  • Chicken should be coated by pressing it into the crushed potato chips while working in batches. Put the object onto the prepared baking sheet and add the butter.
  • Place in oven and bake for 20 to 25 minutes, rotating pieces halfway through, until crisp and cooked through.

Instructions
 

  • Chicken should be washed and dried with paper towels.
  • In a small bowl, mix the smashed chips with the pepper, parsley, garlic powder, and oil.
  • Butter should be melted before dipping the chicken in the potato chip mixture.
  • Place on a cookie sheet with foil and butter. (Place a cooling rack on top of the foil in your pan for chicken that is crispy on the bottom. The chicken cooks more crisply because air can flow underneath!)
  • Sprinkle the remaining butter and any leftover chips on top of the chicken.
  • Bake at 375° for 40–50 minutes, or until the internal temperature of the chicken reaches 165° and the juices run clear.

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 teaspoon garlic minced
  • 2 tablespoon gluten-free flour
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon hot Mexican style chili powder
  • 2 1/2 cups chicken broth
  • 1 1/2 cups salsa verde
  • 3 cups rotisserie chicken cubed or shredded
  • 15 ounces Great Northern beans drained and rinsed
  • 1 cup fresh cilantro chopped
  • 8 ounces tortilla chips crushed
  • 8 ounces shredded Mexican cheese blend

Instructions
 

  • Warm up the oven. A 400 degree oven is recommended. Spray nonstick cooking spray onto a 3-quart baking pan. Place aside.
  • Sauté garlic and onions. Heat olive oil in a sizable stockpot or sauté pan made of cast iron. About 2 minutes after adding the onions, they should be transparent. Spices and garlic may be added.
  • One medium onion, diced, one clove of minced garlic, one teaspoon of cumin, half a teaspoon of dried oregano, and one-fourth of a teaspoon of hot Mexican-style chili powder.
  • Produce the roux. Flour is added, and then chicken broth is whisked in gradually. Simmer for a while. Cook for about 2 minutes, or until a mild thickening of the mixture occurs. Remove from heat after adding salsa, chicken, beans, and cilantro.
  • 3 cups of shredded or cubed rotisserie chicken, 2 tablespoons of gluten-free flour, 2 1/2 cups of chicken broth, 1 1/2 cups of salsa verde,
  • 15 ounces of Great Northern beans, rinsed and drained, and 1 cup of chopped fresh cilantro
  • A casserole is layered. Sprinkle roughly a third of the crushed tortilla chips in the pan that has been prepared. Add the chicken mixture on top, then sprinkle on half of the shredded cheese before adding the final tortillas and cheese.
  • 8 ounces of shredded Mexican cheese mixture and 8 ounces of crushed tortilla chips
  • Bake. 30 minutes of baking while foil is covered. Remove the lid and bake for a further five minutes, or until the cheese is browned.
  • Garnish. If desired, garnish with tomatoes, avocados, green onions, jalapenos, or cilantro.

You can swap out the ordinary tortilla chips for Doritos or flavored tortilla chips.
