Instructions
- A pan with enough oil for frying should be heated. As soon as the oil is heated, quickly fry each tortilla for a few seconds on each side.
- Transfer the tortillas to a plate covered with paper towels so they can dry.

- To Assemble the Enchiladas:
- 8 to 10 6- inch flour tortillas
- 3 cups shredded chicken
- 1/2 yellow onion diced
- 2-3 cups shredded cheese
- 3 cups mole sauce
- For Garnish Optional:
- Avocado
- Chopped green onion
- Cilantro
- Cotija cheese
Instructions
- To make the mole sauce, pour the boiling water into a powerful blender, then add the chilies and process until smooth. Allow to soften for ten minutes.
- On high, combine the kosher salt, honey, onion, tomatoes, and garlic until smooth.
- Then, blend for 30 to 60 seconds after adding the peanut butter, cinnamon, and chocolate chips.
- Making the enchiladas
- Set the oven to 400°F.
- Add 1 cup of the mole sauce to a 9x12-inch baking dish, tilting the dish to coat the bottom with the sauce.
- Each tortilla should be stuffed with 1/3 cup of the chicken and 1/4 cup of shredded cheese. Add extra mole sauce and the onion powder, then garnish. Enchilada should be rolled and placed seam-side down in pan.
- Repeat the process, then nestle the enchiladas close to one another.
- Add extra shredded cheese on top after drizzling 1 1/2 cups of the sauce over the middle of the enchiladas.
- Bake for 20 minutes, or until heated through and the cheese is melted, under a tent of aluminum foil.
- After removing the foil, bake for a further ten minutes. If preferred, garnish with diced avocado, onion, cilantro, and cotija cheese.
Notes

- 3 Small slices of french bread
- 1/3 Cup of raw pumpkin seeds
- 1/2 Small white onion sliced

- 1/2 Large ripe dark-skinned plantain peeled thickly sliced
- 1 Tablet of Mexican drinking Chocolate* About 3.1 ounces.

- Cooking guidelines for the chicken:
- In a big pot, combine all the ingredients. heating to a boil Reduce heat, cover, and simmer for about 35 minutes, removing foam as needed, until chicken is barely cooked through. Place chicken in a bowl, cover, and refrigerate. Reserve broth in pot after straining.
- Regarding the Mole Sauce
- Prepare each component in accordance with the list. This action is crucial.

- Grind the spices as finely as you can in an electric coffee/spice grinder. Cinnamon, cloves, peppercorns, and all the other toasted ingredients (apart from the sesame seeds). If you have a professional blender instead of a grinder, you can skip this step and put the spices and seeds on the saucepan with the other ingredients to be ground in the blender.
- To serve the mole, set aside 2 tablespoons of the sesame seeds. Grind the remaining sesame seeds as coarsely as you can. After that, add this concoction of herbs, seeds, and seasonings to the bowl containing the peppers.
- Now, add a small amount of the lard or vegetable oil to a skillet. Once heated, add each of the ingredients and fry them until golden brown, draining any excess fat as you go. For example, fry the raisins until they are plump, the almonds until well-browned, and the pumpkin seeds until they start to swell (take care, since they tend to explode and jump).
- The chicken stock will be added to the pot along with each item. While cooking the remaining ingredients, roast the tomatoes and garlic cloves. Place the onions in the bowl after browning them in the pan.
- Crisp up the bread and tortilla in hot oil. To avoid it being absorbed, especially by the tortilla and bread, only add a small amount of fat at a time.
- Add the plantain and cook for about 3 minutes, or until golden. Drain any extra fat using a slotted spoon, then transfer to a bowl. Use a ripe plantain, please.
- This is the bowl that was used to combine all of the cooked and toasted ingredients before they were ready to be blended. It will appear a little bit disorganized. Roughly crush the tortilla and bread, and chop the roasted tomatoes. The grinding procedure will become a little bit simpler as a result.
- Add the peeled garlic and 12 cup of the chicken stock to the blender jar. Once the spice mixture has been added gradually and has been thoroughly blended, add another 1/2 cup of broth and gradually process the fried components into a somewhat fine paste. Unless your blender engine is heating up or smoking, try to avoid adding extra liquid. Instead, release the blades frequently with a rubber spatula. Up until everything has been pureed, you will need to complete this step in two or three batches. The entire sauce is ground twice in my Vitamix. Pass the entire mixture through a sieve if the final product is still gritty.
- Reheat the sauce in a sizable saucepan over medium heat, scraping the pan's bottom frequently to prevent sticking. Use salt to season.
- Stir the mixture as it cooks for another 8 minutes, or until it becomes quite thick. Cook the mixture for about 25 minutes, stirring occasionally, until it is bubbling and splattering. Add more broth as needed to achieve the desired thickness. Oil pools should have started to surface by now.
- Add cooked chicken to hot mole; simmer for 10 minutes or until chicken is well warm. Put a piece of chicken on a warm dish to serve. Spoon on plenty of the mole sauce; sprinkle with sesame seeds. It is typically served in Mexico with a lot of warm tortillas, white rice, and peas.
- This mole can be made well ahead and the leftover sauce can be kept very successfully in the freezer for about six months. When reheated it will probably have to be diluted with more broth and freshly cooked chicken, or better yet used for chicken-filled enchiladas.

- 8 black peppercorns whole

Instructions
- In a sizable casserole, combine the meat with the bay leaf. Add just enough water to just cover the mixture. Turn the heat to medium and cook with the lid on for about 30 minutes. The meat will begin to brown on its rendered fat as the water begins to diminish. A tender beef will be produced by the slow cooking technique. If your meat seems raw after this time, continue cooking and add a little more water as necessary.
- Tomatillos should be put in a pan with water, covered, and heated to a boil while the meat is cooking. Once it begins to boil, lower the heat to low and let it simmer for 6 to 8 minutes, or until the tomatillos are tender and pale green. o

- In a big skillet over medium-high heat, warm the oil. When the onion is transparent, add it. Cook the garlic for 30 to 40 seconds after adding it.
- Add the black beans, cumin, oregano, and salt after taking the pan off the heat. Add the cooked chicken and toss to mix.
- Combine the Monterey Jack and cheddar cheeses in a medium bowl. The remaining cheese is combined with the chicken mixture, saving one cup of the cheese for later use. Toss to evenly combine.
- Each tortilla should have 1 to 2 teaspoons of mole sauce spread across one side. Each tortilla should have 1/2 cup of the chicken mixture in the center. Place the seam side down in the casserole dish after rolling up. Continue with the remaining tortillas.
- The remaining mole sauce should be poured over the enchiladas before adding cheese.
