In Canada and the United States, “chicken salad” refers to either any salad with chicken, or a specific mixed salad consisting primarily of chopped chicken meat and a binder, such as mayonnaise, salad dressing or cream cheese. Like tuna salad and egg salad, it may be served on top of lettuce, tomato, avocado, or some combination of these. It may also be used for sandwiches. Typically it is made with leftover cooked or canned chicken. It may also refer to a garden salad with fried, grilled, or roasted chicken (usually cut up or diced) on top. Wiki

1.Broccoli Salad (like Chicken Salad Chick)

Broccoli Salad (like Chicken Salad Chick)

I attempted to recreate this after having it at Chicken Salad Chick. Sometimes I feel like I can't stop eating this salad. Recently, I made the decision to follow the ketogenic diet. Rather of using Marzetti, you can make this keto-friendly by using sugar-free mayonnaise, Stevia, and apple cider vinegar.
Prep Time 1 hr
Cook Time 30 mins
Servings 8 People

Ingredients

  • 24 oz fresh broccoli flowerettes
  • 12 oz pkg of shredded cheese
  • 1 lb maple bacon
  • 1/2 c marzetti slaw dressing

Instructions

  • Prepare bacon for a medium crispness. Once cooled, cut into bite-sized pieces and put away.
  • Second, finely dice the fresh broccoli flowerettes and the stalks
  • Place the broccoli and cheese in a large bowl, then pour the dressing, tablespoon by tablespoon, until the broccoli is fully coated but not drenched.
  • Add the chopped bacon and chill for a couple of hours before serving.

3.Chicken Broccoli Salad

Chicken Broccoli Salad

This salad is just what you need during the warm summer months! The flavor, which is both sweet and sour, is quite addicting.
Prep Time 15 mins
Cook Time 1 hr
Servings 10 People

Ingredients

  • 8 cups broccoli florets
  • 3 cooked skinless boneless chicken breast halves, cubed
  • 1 cup chopped walnuts
  • 6 green onions chopped
  • 1 cup mayonnaise
  • ¼ cup apple cider vinegar
  • ¼ cup white sugar
  • ¼ cup crumbled cooked bacon

Instructions

  • In a large bowl, combine the roasted broccoli, cooked chicken, chopped walnuts, and chopped green onions.
  • In a bowl, thoroughly combine the mayonnaise, vinegar, and sugar by whisking the ingredients together.
  • The broccoli combination should be coated with the mayonnaise dressing that has been poured over it.
  • If you would want it cooled, cover it and put it in the refrigerator. Before serving, sprinkle the crumbled bacon over the top.

Notes

Although the recipe asks for raw broccoli, I prefer to steam it in the microwave for approximately two minutes with a little amount of water first, then refrigerate it. In addition to that, I make use of light mayonnaise or salad dressing and Splenda (R). If you don't want to use chicken, you may still prepare a tasty broccoli salad with this recipe.

How many calories should I eat a day?

In general, the recommended daily calorie intake for women is 2,000 calories, whereas the recommended daily calorie intake for males is 2,500.

What happens if you eat less than 1200 calories a day?

The majority of individuals cannot maintain a healthy weight on a diet of just 1,200 calories per day, which may lead to adverse health consequences such as dizziness, intense hunger, nausea, micronutrient deficiencies, exhaustion, migraines, and gallstones ( 23 ). Prep Time 25 mins
Cook Time 15 mins
Servings 6 People

Ingredients

  • 1 15.5 oz can chickpeas rinsed and drained approximately 1 1/2 cups
  • 2 cups cooked quinoa approximately 1/2 cup uncooked yields 2 cups cooked - see below for instructions if needed
  • 1 cup shredded carrots
  • 1 cup snow peas cut into thirds
  • 1 cup thinly sliced red bell pepper
  • 1 1/2 - 2 cups red or purple cabbage thinly sliced
  • 1 1/2 cups small broccoli florets
  • 1/2 cup salted cashews optional but recommended
  • Miso Ginger Dressing yields 1/4 cup, doubles well if you want more dressing
  • 1 tablespoon white miso paste
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh ginger
  • 2 tablespoons gluten-free tamari
  • 1 tablespoon rice vinegar
  • 1- 2 teaspoons honey optional for a sweeter dressing
  • teaspoon sea salt optional

Instructions

  • If the quinoa has not previously been cooked, then cook it.
  • Put a half a cup of quinoa and a cup of water in a pot of a medium size. Bring the liquid to a boil. Once it has to a boil, reduce the heat to a simmer, cover, and continue cooking for 15 minutes or until all of the water has been absorbed. After the water has been absorbed, turn off the heat and let the food sit for a while to cool down. Before using, fluff the mixture using a fork. Note that if you start with 1/2 cup of uncooked quinoa, you will end up with roughly 2 cups of cooked quinoa.
  • Prepare the rest of the veggies, and in the meanwhile, mix together the dressing.
  • In a small dish or a liquid measuring cup, whisk together all of the ingredients until they are well blended.
  • Assemble
  • Put all of the chopped vegetables, chickpeas, cooked quinoa, and cashews into a large bowl and mix everything together. Toss the salad with the dressing once it has been added. Serve, and have fun with it!
