- If the quinoa has not previously been cooked, then cook it.
- Put a half a cup of quinoa and a cup of water in a pot of a medium size. Bring the liquid to a boil. Once it has to a boil, reduce the heat to a simmer, cover, and continue cooking for 15 minutes or until all of the water has been absorbed. After the water has been absorbed, turn off the heat and let the food sit for a while to cool down. Before using, fluff the mixture using a fork. Note that if you start with 1/2 cup of uncooked quinoa, you will end up with roughly 2 cups of cooked quinoa.
- Prepare the rest of the veggies, and in the meanwhile, mix together the dressing.
- In a small dish or a liquid measuring cup, whisk together all of the ingredients until they are well blended.
