  • 24 oz fresh broccoli flowerettes
  • 12 oz pkg of shredded cheese
  • 1 lb maple bacon
  • 1/2 c marzetti slaw dressing

Instructions
 

  • Prepare bacon for a medium crispness. Once cooled, cut into bite-sized pieces and put away.
  • Second, finely dice the fresh broccoli flowerettes and the stalks
  • Place the broccoli and cheese in a large bowl, then pour the dressing, tablespoon by tablespoon, until the broccoli is fully coated but not drenched.

Notes

Although the recipe asks for raw broccoli, I prefer to steam it in the microwave for approximately two minutes with a little amount of water first, then refrigerate it. In addition to that, I make use of light mayonnaise or salad dressing and Splenda (R). If you don't want to use chicken, you may still prepare a tasty broccoli salad with this recipe.

  • 2 tablespoons gluten-free tamari
  • 1 tablespoon rice vinegar

Instructions
 

  • If the quinoa has not previously been cooked, then cook it.
  • Put a half a cup of quinoa and a cup of water in a pot of a medium size. Bring the liquid to a boil. Once it has to a boil, reduce the heat to a simmer, cover, and continue cooking for 15 minutes or until all of the water has been absorbed. After the water has been absorbed, turn off the heat and let the food sit for a while to cool down. Before using, fluff the mixture using a fork. Note that if you start with 1/2 cup of uncooked quinoa, you will end up with roughly 2 cups of cooked quinoa.
  • Prepare the rest of the veggies, and in the meanwhile, mix together the dressing.
  • In a small dish or a liquid measuring cup, whisk together all of the ingredients until they are well blended.
  • Assemble
  • Put all of the chopped vegetables, chickpeas, cooked quinoa, and cashews into a large bowl and mix everything together. Toss the salad with the dressing once it has been added. Serve, and have fun with it!
