1.Jennie’s Heavenly Slow Cooker Chicken

Jennie's Heavenly Slow Cooker Chicken

This is the finest chicken slow cooker meal I have ever tried, and I've tried many. I cannot recall where I initially obtained it; my version has been modified somewhat. I dislike mushrooms, however the mushrooms in the condensed soup are really large and simple to remove. Serve over piping hot rice.
Prep Time 4 mins
Cook Time 4 hrs
Servings 4 people

Ingredients

  • 2 tablespoons butter
  • 1 .7 ounce package dry Italian-style salad dressing mix
  • 1 10.75 ounce can condensed golden mushroom soup
  • 1 8 ounce container chive and onion cream cheese
  • ½ cup dry white wine
  • 4 skinless boneless chicken breast halves

Instructions

  • In a saucepan over medium heat, melt the butter and toss in the salad dressing mix, mushroom soup, cream cheese, and wine until the sauce mixture is hot, smooth, and well mixed. Place the chicken breasts in the bottom of a slow cooker and cover them with the sauce mixture. Cover and simmer on Low for about 4 hours, or until the chicken is cooked.

2.Heavenly Broiled Chicken Breast Recipe

Heavenly Broiled Chicken Breast Recipe

Heavenly chicken breasts, soft and juicy, cooked under the broiler and like grilled chicken, but without the mess and ready in less than 15 minutes.
Prep Time 5 mins
Cook Time 10 mins
Servings 5 people

Ingredients

  • 3 chicken breasts boneless and skinless
  • 5 garlic cloves minced
  • 3 tsp olive oil
  • Salt to taste
  • Black pepper to taste
  • Cayenne pepper to taste
  • Finely chopped fresh herbs to taste my favorite is fresh dill (see note)

Instructions

  • Place the upper rack 3 to 4 inches from the hot source. Adjust the oven to broil and preheat it on high.
  • Line a baking sheet with aluminum foil.
  • Cut the chicken breasts in half along their length. Spread over the baking sheet. Rub each piece with a little quantity of olive oil, perhaps 1/2 teaspoon per half-breast, and then season with salt, pepper, cayenne pepper, herbs, and chopped garlic. Pat to ensure that the seasonings adhere.
  • Broil the breasts for about 3 to 5 minutes each side, or until the internal temperature reaches 165 degrees Fahrenheit. The broiling time will vary based on the oven, the heating element's power, the distance from the element, etc. Always pay careful attention to the chicken, as it will only need minutes to cook.

Notes

Dry herbs should not be used since they are readily combustible. I have had luck with fresh dill and always use it. You may omit the herbs entirely. Roasted garlic will provide a plenty of taste.

3.Heavenly Chicken

Heavenly Chicken

This chicken has several names, but we decided to call it Heavenly Chicken since it is so wonderful! Extremely moist and soft because to the sour cream, and bursting with rich, buttery flavor from the butter drizzle and crunchy Ritz crackers.
Prep Time 10 mins
Cook Time 30 mins
Servings 4 people

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup sour cream
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 ½ cups crushed Ritz crackers
  • 2 tablespoons melted butter
  • parsley for garnish

Instructions

  • Preheat the oven to 375 degrees Fahrenheit. Spray a 9 by 13-inch baking dish with nonstick cooking spray.
  • The chicken breasts are pounded to a consistent thickness.
  • Stir together the sour cream, garlic powder, onion powder, and paprika in a shallow bowl.
  • The Ritz crackers should be placed in a second shallow dish.
  • Coat each chicken piece with sour cream and then cracker crumbs, pushing the crumbs into the chicken.
  • Place chicken in a baking dish that has been prepped and sprinkle with melted butter.
  • Bake for 30 minutes, or until the internal temperature of the chicken reaches 165 degrees.
  • Allow chicken to rest for three to four minutes before serving.

Notes

If desired, chicken thighs may also be utilized.
Given that Ritz crackers are naturally extremely salty, no additional salt is used to this recipe. Feel free to include it if you believe it is necessary.
Ritz crackers may be used in place of bread crumbs. If using unseasoned bread crumbs, 1 teaspoon of salt should be added to the bread crumbs.
