Instructions
- Garlic, onion, parsley, and ground coriander should all be measured out and added to the mortar. Make the herbs and spices as tiny as possible by pounding and grinding them with the pestle. You might also use a spice grinder as an alternative.
- Combine all of these spices by swirling them together in a jar or other container before adding the lemon pepper, aleppo pepper, paprika, and turmeric.
- The Montreal chicken seasoning may be kept for up to six months or more if it is stored in a jar or other container that has a cover that fits tightly and is placed in a cold, dry location.
Notes
TO USE: Combine 1 14 pounds of boneless, skinless chicken breast halves, 2 teaspoons of light olive oil, and 2 tablespoons of seasoning in a bowl. Toss to combine. Preheat your grill to 450 degrees, and after it's ready, grill the seasoned chicken for about 4 to 6 minutes each side, or until it reaches an internal temperature of 165 degrees. The dish should be allowed to rest before being served with additional freshly ground black pepper and one or two pinches of kosher salt.

Notes

The dry-rub combination that inspired Montreal seasoning was brought to Canada by Romanian Jewish immigrants to the city of Montreal. The orange zest adds a subtle sweetness to the robust taste of Canadian steak spice. Similar to the flavor of corned beef or pastrami pickling spice.

- 1 cup black pepper coarse ground
- 1/2 cup kosher salt coarse grind
- 1/3 cup dried garlic chips See Note 1
- 1/3 cup onion powder
- 3 tbsp paprika
- 3 tbsp dill seeds or caraway seeds
- 1 tbsp dried orange peel See Note 2
Instructions
- Mix the kosher salt, the coarsely powdered black pepper, the dehydrated garlic, the onion powder, the paprika, the dill seeds, and the orange peel in a bowl. Keep in a cool, dry place and seal the container tightly to prevent air exposure.
- This recipe yields 2 and a half cups (See Note 3). Keep it in a container that can be closed.
Notes
In most cases, I use the orange peel that is sold by Penzy's and comes in chip form.
In the event that you are using a fresh orange, take a citrus zester and carefully remove half of the peel from the orange, taking careful not to obtain any of the white pith section. You just need the zest and any essential oil that may be present. If you are not going to use the orange zest right away, lay it out on a piece of parchment paper so that it can dry out. The Montreal steak seasoning is less likely to form clumps as a result of this.
This recipe yields 2 1/2 cups, which is equivalent to 40 tablespoons, 120 teaspoons, or 480 1/4-tsp servings. Use it whatever you choose.

- 2 tablespoons mixed peppercorns black, white, green, and red or all black peppercorns
- 2 tablespoons coriander seeds
- 1 tablespoon mustard seeds
- 1 tablespoon allspice seeds
- 1 tablespoon dehydrated garlic
- 1½ tablespoons dill seed dried
- 1 tablespoon rosemary leaves dried
- 2 teaspoons sweet paprika ground
- 1 teaspoon red pepper flakes
- 2 tablespoons Morton kosher salt
Instructions
- PRÉPARE a MEASUREMENT of the dry herbs and entire spices.
- BEFORE you start cooking, have a small skillet hot over medium heat on the stove.
- TOAST the peppercorns, coriander seeds, mustard seeds, and allspice seeds in their own individual pans. Because of the varied diameters of their seeds, the various spices do not all toast at the same rate. Toasting the peppercorns takes around five to seven minutes and should be done over a heat setting of medium low. To toast allspice seeds, it takes around 5 to 6 minutes, coriander seeds require approximately 4 to 5 minutes, and mustard seeds require approximately 3 to 4 minutes. Be careful not to let the spices become burnt.
- BEFORE GRINDING the spices, let them COOL for about three minutes.
- CRUSH the spices to a coarse consistency. Make use of a food processor, a grinder specifically designed for spices, or a tiny coffee grinder. Pulse the mixture approximately five to seven times, or until the spices have a roughly ground consistency. If your spice grinder is on the smaller side, you might need to do the more difficult grinding in two different batches.
- CRUSH the garlic, dill, and rosemary to a fine powder. It is strongly suggested that you use the same food processor or spice grinder. Perform two to three pulses.
- In a dish of approximately medium size, combine the ground spices, the herbs that have been crushed, and the remaining ingredients. Use a spoon to stir the items together until they are completely combined.
- You may keep it for up to three months if you store it in an airtight jar on your spice rack. After being ground, the flavor and scent of spices gradually diminish, thus it is important to store them with the cover on the container.
