- 1 Cup Red Hot

- If you have full wings, use a knife to separate the drums and flats before putting the wings in a sizable gallon bag.
- Pour the beer over the ziplock after adding 1 Tbsp of rub, salt, and 1/4 cup of brown sugar. Place the ziplock closed in the refrigerator for the night (brine for at least 12 and up to 24 hours)
- Wings should be taken out of the bag and placed on a cookie sheet lined with foil. Use paper towels to absorb moisture. Combine the corn starch, 2 Tbsp of the rub, and the wings in a big bowl.
- Grill the wings directly on the grates for 30 minutes at 150 degrees.
- Adjust your smoker to cook at after 30 minutes.
Notes
Be mindful of the salt you use; fine grain kosher salt or table salt can produce highly salted wings. For this dish, I use Morton Coarse Grain Kosher Salt.
