  • 2,5 lb chicken wings
  • 2 tablespoon paprika
  • 2 tablespoon salt
  • 2 tablespoon freshly ground black pepper
  • 1 tablespoon cumin
  • 2 tablespoon garlic powder

Instructions
 

  • Combine all the spices in the following list to form a rub. Rub chicken wings with and leave for ten minutes.
  • Set your smoker to 250F while you wait. Place the wings on the rack in the smoker, allowing some space between each. Hickory wood should be loaded into the smoker before beginning to smoke.
  • As required, add wood. I had to add wood to my Masterbuilt smoker three times throughout the cooking process.
  • Wings should be finished cooking in two hours, but use a thermometer to make sure the temperature within the meat's thickest section is 165 degrees.

Notes

Please tweek the seasonings to your liking. Before smoking, make sure the wings are fully covered in spices.
If you'd like, cut the wings into pieces. I divide it into three parts, removing the top one.
For crispy wings, broil them for a few minutes in the oven.

  • 3 Tbsp Nick’s Poultry Rub
  • 1 ½ Tbsp Baking Powder or Corn Starch
  • 18 ounces IPA beer
  • 2 Tbsp kosher salt
  • 1 ¼ cup brown sugar
  • 1 Cup Red Hot
  • 4 Tbsp Butter

Instructions
 

  • If you have full wings, use a knife to separate the drums and flats before putting the wings in a sizable gallon bag.
  • Pour the beer over the ziplock after adding 1 Tbsp of rub, salt, and 1/4 cup of brown sugar. Place the ziplock closed in the refrigerator for the night (brine for at least 12 and up to 24 hours)
  • Wings should be taken out of the bag and placed on a cookie sheet lined with foil. Use paper towels to absorb moisture. Combine the corn starch, 2 Tbsp of the rub, and the wings in a big bowl.
  • Grill the wings directly on the grates for 30 minutes at 150 degrees.
  • Adjust your smoker to cook at after 30 minutes.

Notes

When you rub the wings, you can apply baking soda or corn starch. Both function as a drying agent that interacts with the skin's salt to help it become crispier.
