3.Herb Crusted Chicken Recipe

Herb Crusted Chicken Recipe

After being pounded with a Parmesan breading that includes fresh basil, parsley, and thyme, chicken that has been crusted with herbs is given a coating of a mustard and lemon combination. Prepare it in advance and freeze it for a simple yet impressive meal.
Prep Time 15 mins
Cook Time 30 mins
Total Time 45 mins
Servings 6 people

Ingredients

  • 1/4 cup lemon juice
  • 1/4 cup Dijon mustard
  • 1/2 teaspoon pepper
  • 1/2 cup Panko breadcrumbs preferably whole wheat
  • 1/2 cup Parmesan cheese grated
  • 2 Tablespoons olive oil
  • 1 Tablespoon parsley chopped
  • 1/4 cup basil leaves cut in thin strips
  • 1 teaspoon fresh thyme
  • 24 ounces chicken breasts boneless skinless

Instructions

  • Preheat oven to 350 degrees F.
  • Turn the temperature in the oven up to 350 degrees F.
  • In a small dish, combine the lemon juice, mustard, and pepper from the Dijon mustard, and put aside.
  • In a separate dish, mix together the breadcrumbs, Parmesan cheese, olive oil, parsley, basil, and thyme, along with two tablespoons of the mustard mixture. Mix all of the ingredients together with a fork until you get a mixture that is crumbly.
  • Place chicken in baking dish, and use a pastry brush to cover the chicken with the remaining mustard mixture.
  • Applying pressure with your fingertips, coat each chicken breast with the breading until it is thoroughly covered. There is no breading on the bottom.
  • Bake, uncovered, for approximately thirty minutes, or until the internal temperature of the chicken reaches approximately 165 degrees Fahrenheit.

Notes

Put everything together, but don't cook the chicken if you want to prepare this ahead of time and freeze it. Put it in a baking dish, cover it, and put it in the freezer for up to two months. Defrost the item in the refrigerator overnight, then proceed with the cooking as directed. This is a fantastic dish that works as well with pork tenderloin or salmon.

What herb or spice goes well with chicken?

To enhance the flavor of chicken recipes, try adding garlic powder, chopped garlic, or roasted garlic. The flavors of garlic and Italian spice complement each other nicely, as do garlic and parsley, rosemary, sage, and thyme in any proportion.

Do chefs Wash chicken?

And trust us, not even a ritzy French chicken restaurant’s chef will tell you to wash your chicken. It is not common practice in France to wash chicken before cooking because doing so removes the bird’s flavorful skin, but as Chef Antoine Westermann explains, “When you are cooking the chicken, the bacteria gets cooked out.”

How do you keep chicken breast moist?

Does thyme taste good on chicken?

Thyme, another Mediterranean herb, is frequently used in chicken dishes due to its mild flavor and ability to complement rather than overshadow other ingredients. • 4 skinless/boneless chicken breasts
  • Salt/Pepper to taste
  • 3 Tablespoons vegetable oil
  • Marinade: Shortcut- Use Italian Salad Dressing
  • 1/3 cup olive oil
  • 1/3 cup ranch dressing
  • 2 tablespoon Worcestershire sauce
  • 1 teaspoon Distilled white vinegar
  • 1 teaspoon lemon juice
  • 1 tablespoon minced garlic
  • 1/2 teaspoon pepper
  • Parmesan Crust
  • 1/2 cup Parmesan cheese chopped into bits
  • 1/2 cup Provolone cheese chopped into bits

  • 4 Tablespoons melted butter
  • 3/4 cup panko breadcrumbs
  • 2 teaspoons garlic powder

Instructions

  • Get ready to cook the Chicken (See notes for baking and grilling method)
  • All of the components of the marinade should be mixed together using a whisk until they are well incorporated and have a consistent texture.
  • Put the chicken in a gallon-sized freezer bag, press out as much air as possible, and then seal the bag. To achieve a thickness of approximately half an inch, pound the flesh using a meat tenderizer. Take note that it will get more plump after being cooked.
  • If desired, a little coating of salt and pepper should be applied on each side of the chicken.
  • After adding the chicken to a fresh freezer bag, add the marinade to the chicken. After airtight sealing, place the container in the refrigerator for at least half an hour or up to a full day.
  • Heat 2-3 Tbsp. vegetable oil in a pan over medium-high heat. (A skillet made of cast iron will produce the crispiest sear.)
  • For about four to five minutes on each side, sear the chicken. Refrain from moving the chicken about while it's sizzling since doing so will prevent the wonderful golden color from forming on the exterior. When the temperature in the pan reaches a dangerous level, turn the burner down to medium. Transfer the chicken to a clean pan or baking sheet and cover it with foil to keep it warm while you construct the Parmesan crust. This should be done once each side of the chicken has achieved a good golden brown color and the inside has been cooked.
  • Include the Parmesan Crust in the mix.
  • Prepare a low broil in the oven after preheating it. (450° F.)
  • Mix in some Provolone cheese, some Parmesan, and some Ranch dressing. After giving it a good swirl to incorporate the ingredients, melt it in the microwave in increments of 15 seconds, stirring after each interval. (It's all with if the consistency is a tiny bit lumpy.) To finish, sprinkle on top of the chicken.
  • Keep an eye on it while it's under the broiler for a total of three minutes.
  • Butter that has been melted should be mixed with garlic powder and panko breadcrumbs. It should be placed on top of the chicken.
  • Continue to broil for one more minute, or until the breadcrumbs acquire a light golden hue. (Keep a tight eye on it over this period of time.) Enjoy with some mashed potatoes as a side dish!

Notes

The nutritional information assumes that after usage, one-half of the marinade will be thrown away. The website of Longhorn also has nutritional information that can be accessed for their recipe.
