Ingredients
  

  • For the smoked wings rub
  • 2 lbs chicken wings flats & drums
  • ½ tbsp garlic powder
  • 1 tbsp baking powder
  • ½ tbsp cayenne pepper
  • 1 ½ tsp salt
  • For smoked buffalo wings sauce
  • 2 tbsp Frank’s hot sauce buffalo style
  • 2 tbsp butter melted
  • ½ tbsp parsley fresh chopped
  • Serving suggestions for smoked hot wings
  • ¼ cup blue cheese dressing
  • 1 medium celery sticks
  • 1 medium carrot sticks

Instructions
 

  • Use the smoked wings rub to season wings. After drying the wings with a paper towel, place them in a big bowl or a big plastic bag that is the size of a gallon. Also, add dry-rubbed spices to the bag (garlic powder, baking powder, cayenne pepper, and salt). Shake the chicken wings and seasoning together in the tight plastic bag to evenly distribute the spices and coat the wings. To ensure that the wings fully absorb the seasoning's flavors, place them in the refrigerator for at least 30 minutes.
  • Prepare the grill. Heat the grill to 180 °F (preheating on the Trager pellet grill takes about 15 - 20 minutes to reach the smoked wings temperature).
  • Start a low-heat grill for chicken wings. There are two parameters you'll utilize to choose how long to smoke wings. Place chicken wings on the grill grates in the smoker and cook for 20 minutes at 180°F. (I don't think using cooking spray or olive oil is necessary.)
  • Bringing the smoking of the wings to a greater temperature. Then, using tongs, flip the chicken wings, raise the Traeger smoker's temperature to 350°F, and cook for an additional 50 minutes, or until the largest chicken wing's internal temperature hits 165°F. Making the wing sauce at this time is a good idea.
  • Smoking chicken wings while making buffalo sauce. Melted butter and Frank's Buffalo Wing Sauce should be combined in a medium bowl. Combine by whisking. Then, add freshly cut parsley and stir the sauce one last time. until the wings are prepared, set aside.
  • Apply buffalo sauce to smoked wings. Add the cooked wings to a big bowl after they are done. When evenly coated, add buffalo sauce and mix the vegetables.   • Buffalo sauce:
  • 1/3 cup Frank's Wings Hot Sauce
  • 1 1/2 cups light brown sugar
  • 1 Tablespoon water
  • Other Sauce ideas: honey BBQ sauce ranch, honey garlic sauce, BBQ sauce

Instructions
 

  • Set the middle rack of your oven to the higher position. Set oven to 425 degrees Fahrenheit.
  • A cooling rack is used as the top layer of a wire rack on top of an aluminum foil-lined baking sheet. Apply non-stick spray to the rack.
  • The wings should be dried with paper towels before being put in a big basin. It's crucial to dry them VERY well!
  • In a small bowl, mix the baking powder, paprika, garlic powder, salt, and pepper. Then, after evenly coating the wings, sprinkle the spice over them.
  • Place the wings on the prepared wire rack in a single layer, skin side up.
  • Turn the wings over every 20 minutes while baking on the upper center oven rack until they are crispy and golden. Depending on the size of the wings, the overall cooking time could last up to an hour.
  • Take out of the oven, then stand there for five minutes. Place the wings in a bowl and add the sauce.
  • Stir all the sauce ingredients together in a medium saucepan over medium heat to make the buffalo sauce. Mix thoroughly until sugar dissolves.
  • Before adding to wings, remove from heat and let cool to room temperature (or prepare the sauce ahead of time and refrigerate).

  • Spice up the wings. Put chicken wings in a sizable bowl for mixing. Olive oil, salt, and pepper should be used tossing the wings after that. Add olive oil to wings when using a dry rub or spice seasoning, but leave out the salt and pepper.
  • Prepare the wings. the grill to 450 degrees. Place the wings directly on the grill and cook for 20 to 30 minutes (depending on the size and thickness of the wings) over direct heat, flipping the wings about every 5 to 10 minutes or so, until an internal temperature of 165 F is reached. Serve right away, if using sauces.

Notes

Place chicken wings on a baking sheet with a rim covered in foil or parchment paper to reheat. Reheat in a 375°F oven for 10 minutes or until the skin is once more crisp.
12 cup Frank's hot sauce, 4 tablespoons unsalted butter, and 1 tablespoon white vinegar should be combined in a sauce pan and served with traditional buffalo sauce. Simmer for a short while to melt the butter. Just before serving, toss the sauce over the cooked wings.
