How do you keep chicken moist and cooked?

Start by brining the chicken for 20 to 30 minutes in a combination of water and a few teaspoons of salt. This will enhance the chicken’s inherent taste and moisture, making for very soft breast flesh. Only by doing this can you be sure your chicken won’t turn out dry and rough.

How long should you cook chicken?

This is the shortest possible response: Twenty to thirty minutes in a 375 degree F oven will do the trick for big boneless, skinless chicken breasts. Using an oven preheated to 375 degrees F, cook big bone-in, skin-on chicken breasts for 35 to 40 minutes.
