  • 1 to 2 teaspoons sugar

  • 500 grams fresh tomatoes
  • pureed or 10 oz., 1¼ cup canned tomato puree/ passata
  • 2 cups hot water

  • Cut the chicken into 1- to 112-inch cubes. Put them in a bowl for mixing. Make sure your chicken doesn't have any extra moisture. If you'd like, use some kitchen tissues to dab the area dry.
  • Include yogurt, kasuri methi, lemon juice, oil, ginger garlic paste, garam masala, cumin, coriander, turmeric, and salt. In case your yogurt is sour, omit the lemon juice.

  • Making Chicken Tikka Masala at Home
  • Gently stir. Refrigerate for a minimum of 8 hours and a maximum of 48 hours after covering with cling film. If you must, you can shorten the time to 3 hours.
  • In a saucepan or pan, heat some oil or ghee. Add the onions and 1 teaspoon of salt. till deep golden, sauté.
  • Include green chili and ginger-garlic paste. Saute for 40 to 60 seconds, or until fragrant.
  • Lower the temperature to low. Cumin, garam masala, coriander, and red chili powder should also be added. Quickly stir well.
  • Add tomato puree and cook over medium-high heat, stirring occasionally, until the onion tomato masala is extremely thick and starts to pull away from the pan's sides. It becomes aromatic as well. (Verify consistency in video)

  • Grill in the Oven: Thread the chicken onto metal skewers or soaked bamboo skewers while the gravy simmers, then arrange the skewers in a tray that has been prepared. For 9 to 10 minutes, bake them at 460 F (240 C) in a preheated oven. With a tong, flip them over, and grill them for a further 9 to 10 minutes. Broil the chicken for 2 to 3 minutes, or until it is just beginning to brown.
  • Alternatively, you can use a skillet and add 1 tablespoon of oil. Separate the chicken tikkas as you place them one at a time. Cook for 3 minutes on a medium-high heat, flip them over with a tong, and cook for an additional 3 minutes, or until blackened but not completely done. Cook in batches and remove to a dish.
  • Alternatively, in an air fryer, skewer the food and place it in the tray or basket. At 400 F or 200 C, air fried for six minutes. Toss them around and air fry for an additional six minutes. If they start to dry out, baste with marinade and cook for an additional 2 minutes, or until just beginning to brown.
  • Add sugar and cream once the tikka masala has thickened (or cashew cream, check notes to make your own). Cook for a few minutes, stirring frequently, until the mixture is thick, creamy, and aromatic. (Verify consistency in video)
  • Include the kasuri methi and fried chicken tikka. Before adding chicken, (make sure your gravy has attained a thick gravy consistency/serving consistency). Chicken tikka should be soft and tender after 2 to 3 minutes of stirring and cooking. Taste the food and, if necessary, add extra salt or sugar.

  • 4 long skewers
  • 1 tablespoon butter
  • 1 clove garlic minced
  • 1 jalapeno pepper finely chopped
  • 2 teaspoons paprika
  • 1 8 ounce can tomato sauce
  • 1 cup heavy cream
  • ¼ cup chopped fresh cilantro

  • In a sizable bowl, combine the yogurt, lemon juice, 2 teaspoons of the spices (cumin, cinnamon, cayenne, black pepper, ginger, and 1 teaspoon of salt). Add the chicken, cover, and chill for a full hour.
  • Heat a grill to a high temperature.
  • Give the grill grate a little oil. Put the chicken on skewers after discarding the marinade. Grill for about 5 minutes on each side or until juices flow clear.
  • In a sizable, heavy skillet set over medium heat, melt the butter. For one minute, sauté the garlic and jalapenos. Add the remaining 1 teaspoon salt, 2 teaspoons of paprika, and 2 teaspoons of cumin to season. Add tomato sauce and cream and stir. About 20 minutes, simmer the sauce over low heat until it thickens.

  • Chicken should be added to a bowl along with the ginger, garlic, yogurt, Kashmir red chili paste, salt, black salt, turmeric, garam masala, carom seeds, lemon juice, gram flour, and red chilies that have been crushed. For one to two hours, masala-marinate the chicken.
  • Heat the oil in a nonstick pan over high heat for 3 to 4 minutes, then turn the heat down to continue cooking the chicken.
  • Cut the remaining 2 onions into cubes after chopping 2 of them in a food processor. Slice two tomatoes into 1-inch cubes after removing the seeds. Capsicum should also be chopped into 1 inch cubes.
  • Cubed onions, tomatoes, and capsicum should be sautéed in 3 tablespoons oil for 2 minutes in another nonstick skillet before being transferred to a bowl.
  • 2 tablespoons of oil should be heated in a separate pan before adding cumin seeds, onions, ginger, and garlic, and sautéing for 1 minute. The remaining 2 tomatoes should be ground before being added to the pan and cooking.

  • Add fresh cream, honey, and vegetables that have been sautéed last. Mix well.

  • 3 chicken breasts approx 500g/17.5 oz - chopped into bite-size chunks
  • 120 g ½ cup Greek yogurt - or thick natural yogurt (full fat)
  • 2 cloves garlic - peeled and minced
  • 1 tbsp minced ginger
  • Juice of half a lemon
  • 1 tsp ground coriander
  • ½ tsp turmeric
  • ½ tsp cumin
  • 1 tsp paprika
  • ½ tsp mild chilli powder
  • 1 pinch of cinnamon
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil - for brushing onto the chicken before grilling
  • 2 tbsp freshly chopped coriander

Instructions
 

  • Combine the yogurt, garlic, ginger, lemon juice, coriander, turmeric, cumin, paprika, chilli powder, cinnamon, salt, and pepper with the chicken breast pieces in a bowl or freezer bag.
  • After combining everything, cover and set in the refrigerator to marinate for two to three hours.
  • Wooden skewers should be soaked in water while the chicken is marinating if you're using them. This will lessen the likelihood of them burning during grilling.
  • Put the marinated chicken on skewers after removing it from the refrigerator.
  • The chicken should be brushed with oil, placed on a griddle plate, and grilled for 8 to 10 minutes, turning it over a couple of times, until it is thoroughly done. For the same period of time, you could also cook (broil) under a grill or barbeque.
  • By slicing the chicken into a larger piece, check to see if the center is still pink and the chicken is done.

Can I get a head start?
The chicken can be marinated for up to a day in advance, but I wouldn't suggest boiling the chicken ahead of time and then reheating it later because it would dry it out.
The chicken kebabs can be prepared, cooled, and then served cold with a salad or in a wrap.
Alternately, you may cook, let them cool, then put them in the fridge or freezer (be sure to properly thaw them in the fridge), and add them to curries so they won't separate when you reheat them. Add them to your curry and let it simmer for 10 to 12 minutes, or until the food is thoroughly heated.

Ingredients
  

  • FOR MARINATING THE CHICKEN
  • 500 g Chicken Boneless Cut into small cubes
  • ¼ cup Hung Curd
  • 2 teaspoon Ginger Garlic Paste
  • 1 tablespoon Lemon Juice
  • 2 tablespoon Tikka Masala Spice Mix
  • 2 teaspoon Salt
  • 2 tablespoon Vegetable Oil
  • 1 pinch Red Food Colour Optional
  • FOR THE GRAVY
  • 2 tablespoon Butter
  • 2 tablespoon Vegetable Oil
  • 2-3 Cardamom
  • 3-4 Cloves
  • 1 inch Cinnamon
  • 3-4 Black peppercorn
  • ½ cup Onion Finely Chopped
  • 1 teaspoon Ginger Garlic Paste
  • 1 cup Tomato Finely Chopped
  • 1-2 Green Chilli Slit into half
  • ¼ cup Tomato Puree
  • 2 teaspoon Kashmiri Red Chilli Powder
  • ½ teaspoon Turmeric Powder
  • ½ teaspoon Roasted Cumin Powder
  • 2 tablespoon Tikka Masala Spice Mix
  • Salt to taste
  • ½ cup Fresh Cream
  • 1 teaspoon Honey
  • 2 tablespoon Kasuri Methi
  • FOR THE SMOKY FLAVOUR
  • Piece of charcoal
  • 1 teaspoon Ghee / Oil

Instructions
 

  • In a bowl, combine all the marinating ingredients for the chicken.
  • Place a lid on the bowl and chill for 10 to 12 hours.
  • Oven temperature set to 200 degrees C.
  • Place the marinated chicken pieces and marinade in a baking pan.
  • Bake for 25 to 30 minutes, or until the top is charred.
  • In a pan, warm the butter and oil.
  • The cardamom, cloves, cinnamon stick, and black peppercorn should be lightly crushed before being added to the hot oil.
  • Give them a few moment to crackle.
  • Add the onion and cook it until transparent.
  • Fry for a minute after adding the ginger-garlic paste.
  • When the tomatoes are soft, add the tomato and simmer for an additional 3–4 minutes.
  • Cook for 3–4 minutes after adding salt, tikka masala, turmeric, cumin, Kashmiri red chilli powder, and green chili.
  • Cook for 2-4 minutes after adding the grilled chicken and 1/2 cup of water.
  • After one minute, add fresh cream, honey, and kauri methi.
  • The charcoal should be heated until it is red hot using a direct flame.
  • Keep a bowl in the centre of the karahi with the chicken and keep the hot charcoal piece in the bowl.
  • Ghee should be poured over the coals before a lid is put on the karahi.
  • Allow the masala to sit for 15 minutes so the smoke may mix in. Discard the charcoal after removing the bowl.
  • Mix the curry thoroughly. Reheat as necessary. Serve heated with laccha paratha or naan.

Notes

The chicken can also be grilled in a pan over stone.
It's not necessary to smoke the curry.
