Ingredients
  

  • 2 Tablespoons butter
  • 2 boneless skinless chicken breasts or 2 cups diced rotisserie chicken
  • 1 teaspoon Italian Seasoning
  • Salt/Pepper to taste
  • 2 1/2 cups chicken broth
  • 1 Tablespoon olive oil
  • 1 1/4 cups white long grain rice uncooked
  • 2 cups fresh broccoli florets uncooked
  • 10.5 oz. Condensed Cream of Chicken Soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese separated
  • Optional Seasonings
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Casserole Topping
  • 1 cup Ritz crackers crushed
  • 2 Tablespoons melted butter

Instructions
 

  • The components for the casserole can all be prepared in one pot before being transferred to a casserole dish and baked. Before you start, check the rice packaging for instructions on how much liquid (chicken broth will be used) and how long to cook the rice for. When cooking white long grain rice, the time and liquid amounts listed below work properly.
  • Set the oven's temperature to 350.
  • Chicken should be cut into bite-sized pieces and seasoned with Italian seasoning, salt, and pepper to taste.
  • Melt the butter in a big pot over medium heat. Add the chicken and cook for about 5 minutes, or until golden brown on all sides. Take out and place aside. Note: If utilizing a cooked rotisserie chicken, this step is not required.
  • Rice should be added to the saucepan along with chicken stock, olive oil, and it should be brought to a boil before being simmered.
  • Cook for 7 minutes with a tight-fitting cover.
  • Replace the cover after adding the broccoli. eight more minutes of cooking. Refrain from moving around.
  • Leave the cover on and turn off the heat. Without stirring, let the rice stand for 10 minutes. Any rice that is on the pot's bottom will release.
  • Add half of the cheddar cheese, the cooked chicken, the soup, milk, sour cream, and desired seasonings.
  • Add to a 9 x 13 casserole dish that has been lightly oiled, then cover with remaining cheese.
  • For 15 minutes, bake with a cover.
  • Insert the Topping:
  • Crumble the crackers and melt the butter together. The casserole topping is created by combining.
  • Add the crumbled cracker topping to the casserole, then bake it for an additional 10 minutes with the lid off.
  • Prior to serving, allow the dish to sit for 5 minutes.

Notes

Using Frozen Broccoli: Expert Advice: Fresh broccoli can be replaced with 2 cups of frozen broccoli (or cauliflower). Just make sure to defrost it and dry it off. Although frozen broccoli has already been blanched (partially cooked), you might also wish to steam it for a few minutes for a softer texture in the casserole.
For this dish, I like to use Heluva Good Cheddar Cheese because it is creamy and melts really beautifully. Aged or extra-sharp cheeses should be avoided as they won't melt as nicely.

Refrigerator
Before baking, this dish can be constructed ahead of time and stored in the refrigerator for up to 2 days. Allow it to lay outside for 30 minutes before baking, or increase baking time by 10.
At the very end of baking, sprinkle on the cracker and butter topping.
Freezer:
Put the casserole together without baking it. It should defrost in the refrigerator for 24 hours. Allow it to set outside for 30 minutes before baking, or increase baking time by 15 minutes.

I cooked it twice a week for a solid three months after the first time I made it because I was on a casserole kick. Although it tastes just as good on its own, I usually serve this with rice. The previous time, I served it with bread instead of rice.

Ingredients
  

  • 3 cups cooked shredded chicken
  • 2 cups cooked chopped broccoli
  • 2 10.5 ounce cans condensed cream of chicken soup
  • ½ cup sour cream
  • 1 pinch ground black pepper to taste
  • 2 ½ cups shredded Cheddar cheese
  • 1 ½ cups bread crumbs
  • ¼ cup salted butter melted

Instructions
 

  • Set the oven to 375 degrees Fahrenheit (190 degrees C).
  • In a bowl, mix together the chicken, broccoli, condensed soup, sour cream, and pepper. Add a cup of Cheddar cheese. Add the remaining Cheddar cheese on top and pour into a 2-quart casserole dish.
  • In a bowl, mix the butter and bread crumbs. over the casserole, sprinkle.
  • Bake for 30 to 35 minutes in a preheated oven, or until bubbling and cheese is melted.

  • Combine the soup, milk, paprika, and cheddar cheese in a medium bowl.
  • Over the chicken, spoon half of the cheese mixture.
  • Sprinkle broccoli pieces on top of the cheese mixture.
  • Add the remaining cheese mixture and Ritz cracker pieces on top.
  • Bake for 45 minutes after placing in oven. (For this dish, I seek for tiny chicken breasts. I split the larger ones in half horizontally. If your chicken breasts are larger and you do not chop them into two smaller pieces, you will need to lengthen the cooking time by at least 10 minutes.)

Notes

The cracker crumbs were placed on top of a thin coating of cheese sauce. I enjoy how they flavor, thicken, and integrate into the sauce. Mix the cracker crumbs with one or two tablespoons of melted butter and sprinkle on top if you want a crunchy topping.
For this, I seek out little, thin chicken breasts. Larger breasts might require more time to cook.

  • ▢1 1/2 cups Ritz Crackers crushed
  • ▢4 tablespoons melted butter
  • ▢8 ounces broccoli frozen
  • ▢4 ounces shredded cheddar cheese
  • ▢1/2 teaspoon seasoned salt

Instructions
 

  • Set your oven's temperature to 350. Follow the instructions on the can of Cheddar cheese soup mix to prepare it (one can of soup mix to one can of milk). A 9 by 13-inch baking dish should be filled with chicken breasts. Use seasoned salt to season the chicken. Over the chicken breasts, pour 3/4 of the prepared soup.
  • Chicken that has been coated with the cheddar soup should also have broccoli added. Sprinkle Ritz crackers that have been buttered with melted butter over the broccoli. Add the remaining stock mixture, and bake the chicken for about 45 minutes, or until cooked through. (Verify chicken by slicing the thickest part and examining it to see if the color is consistent.) Sprinkle some shredded cheddar cheese over the chicken after it has been taken out of the oven.
