Chicken inasal, commonly known simply as inasal, is a variant of the Filipino chicken dish known as lechon manok. It is chicken marinated in a mixture of calamansi, pepper, coconut vinegar and annatto, then grilled over hot coals while basted with the marinade. It is served with rice, calamansi, soy sauce, chicken oil and vinegar (often sinamak vinegar, a palm vinegar infused with garlic, chili peppers and langkawas). A common dish in the Visayas, it is a popular specialty in the city of Bacolod, where an entire street market is dedicated to local dishes, particularly inasal. Ingredients
  

  • MARINADE
  • 2 pound chicken - cut into serving size
  • 1 cup vinegar coconut, cane or cider
  • 1 1/2 pieces lemon or 15 kalamansi juiced (approx. half cup)
  • 1 thumb fresh ginger - peeled
  • 3 cloves garlic
  • 2 stalks lemon grass
  • 2 tablespoons salt
  • 1/2 tablespoon ground black pepper
  • 1/4 cup brown sugar
  • CHICKEN ANNATTO OIL SEE NOTES
  • 500 grams chicken skin with fat
  • 1 1/2 cups water
  • 1 cup oil
  • 4 tablespoons Annatto Seeds
  • BASTING SAUCE
  • 3 tablespoons chicken Annato/Achuete oil
  • 5 tablespoons margarine or butter - melted
  • 1/4 teaspoon salt
  • 1 teaspoon lemon juice or kalamansi juice

Instructions
 

  • INASAL CHICKEN
  • Salt and sugar are dissolved in vinegar. Blend the vinegar with the remaining marinade ingredients for 2-3 minutes, or until all are finely chopped.
  • Put the chicken pieces in a ziplock bag or another food-safe container. Fill the plastic bag with the chicken and marinade before sealing. Place in the fridge for at least an hour, but overnight is preferable.
  • When it is time to cook, remove from the refrigerator.
  • Simply combine all of the ingredients for the basting sauce in a bowl.
  • Grill the chicken pieces until thoroughly done, occasionally brushing both sides with annatto oil.
  • Place the served chicken on a serving plate and give it a few minutes to rest. Serve with rice and Annato oil chicken sauce.
  • ANNATTO OIL FOR CHICKEN
  • Cook chicken skin for 15 minutes, or until it is nearly dry and oil has rendered.
  • Add oil, then cook the food for 10 minutes, or until crispy.
  • Add the Annatto seeds after removing the chicken skin. For 1-2 minutes, cook.
  • After removing from the heat, strain the oil to catch any stray particles. Place the annato oil made from chicken in a jar.

Notes

You will get between 1 1/2 and 2 cups of oil from the components in this recipe for chicken annato oil. sufficient for two pounds of chicken. The leftovers can be kept for a later date or used in other recipes.

Instructions
 

  • Marinate the chicken in a large basin with the ingredients, which should include the garlic, vinegar, ginger, calamansi juice, tanglad, sugar, salt, and pepper.
  • On the meat, rub the marinade.
  • For one hour, chill the marinated chicken.
  • Put the annatto seeds and margarine in the pan and cook it over medium heat.
  • Once the margarine has melted and the annatto seeds have been thoroughly combined and become orange, stop stirring.
  • After removing from heat, season with a little salt and pepper, to taste.
  • Cut the meat on the side closest to the bone after marinating the chicken to make grilling easier.
  • The chicken can be skewered (optional) and grilled while occasionally being basted with sauce.
  • Serve with Kalamansi and Siling Labuyo with Oyster Sauce, Sinamak, or Soy Sauce.

  • Basting sauce
  • ½ cup annatto seeds
  • 4 tablespoons cooking oil
  • ¼ teaspoon turmeric powder
  • ½ cup margarine
  • ½ piece lime

Instructions
 

  • Crush and chop the lemongrass. In a big basin, combine all the marinade ingredients. After stirring, leave it for 10 minutes.
  • Place chicken in sizable bags that can be sealed. Adding more bags as necessary Pour the marinade evenly into each bag. Seal the bag after forcing the air out. Refrigerate overnight while marinating.
  • Create the annatto oil to use in the basting sauce. In a saucepan, mix 4 tablespoons of frying oil with the annatto seeds. Cook over heat until the oil begins to sizzle. As soon as the oil gets red, turn off the heat and stir. Put the seed's oil through a filter.
  • Margarine, turmeric powder, lime, and annatto oil should all be combined. If you'd like, you can also add some salt.
  • Grill should be heated. The chicken pieces should be grilled for 2 minutes before being turned over to sear the other side. Every time the chicken is turned, brush on some basting sauce. To avoid burning your skin, do this on a medium heat setting. Remove the skin before grilling if the heat is uncontrollable to avoid burning it. When the internal temperature of the chicken reaches at least 165°F, it is considered cooked.
  • Serve your chicken inasal with your preferred dipping sauce on a platter. Enjoy and share!
