  • chop stick or pencil or wooden skewers or metal skewers

Ingredients
  

  • 500 grams ground chicken ground with white chicken fat. see notes
  • 1 medium onion finely chopped squeeze and discard excess water. See notes
  • 3 tablespoon fresh coriander finely chopped
  • 2 tablespoon minced ginger
  • 2 tablespoon garlic chopped (lahsun)
  • 1-2 green chillies finely chopped
  • 3 tablespoon butter
  • 2 tablespoon cream
  • 3 tablespoon seekh kabab masala Recipe given below. You can use ready-made too.
  • ghee or oil for frying
  • 2 inch piece of charcoal to smoke
  • Ingredients for Seekh Kabab Masala recipe
  • 3 tablespoon gram flour or chickpea flour besan
  • 1 tablespoon coriander seeds
  • 1 tablespoon Kashmiri red chilli powder or paprika for color
  • ¾ tablespoon red chilli powder more to taste
  • ½ tablespoon cumin seeds
  • 1 teaspoon black pepper
  • ½ teaspoon turmeric powder
  • ¼ teaspoon oregano seed ajma
  • 4 cloves laung
  • 1 teaspoon salt or to taste

Instructions
 

  • For Masala:
  • Roast all ingredients of seekh kabab masala in a pan for 1 minute on medium heat with constant stirring. (Gram flour can burn quickly so be alert.) Remove into the plate, cool it, and grind it into a fine powder in a spice grinder. Seekh kabab spice mix is ready.
  • Marination
  • Take your ground chicken in a bowl. Add ginger, onion, butter, cream, seekh kabab masala, garlic, green chilies and coriander.
  • Mix well. Cook a small lump of the mixture in a frying pan to do a taste test. Adjust salt and seekh kabab masala to your taste. Then marinate chicken mixture for 20-30 minutes in the fridge.
  • Method 1: Seekh kabab Recipe (Stovetop or Pan-fried)
  • Heat charcoal on flame for smoking. (If smoking)
  • Grease your hand with oil. Roll a ball of kabab out of the marinated mixture and shape it on a pencil, chopstick, or skewer and make a long cylindrical kabab.
  • Heat 1-2 tbs oil in a pan on medium heat. Fry seekh kabab on medium-high heat until golden from all sides.
  • Fry all kabab in batches and store in aluminum foil and smoke with charcoal.
  • Method 2: In an Oven
  • Pre-heat oven at 300 F. Place roll kabab on a baking tray and cook for 10 minutes until firm and golden. Flip the kabab halfway for even cooking. Smoke and serve hot.
  • To Smoke Seekh kabab (Optional Step)
  • Gather all kabab in a pan or pot. Place the red hot charcoal on a foil in between the kabab. Now drizzle a few drops of oil on coal and quickly cover the pot with a tight lid. The smoke must not escape the pot.
  • Smoke for 5 minutes, then lift the lid and serve with raita or chutney.

Notes

Ground chicken with fat: Chicken grounded with white chicken fat is essentials for making juicy seekh kababs. I used boneless chicken and grounded it with white fat around the chicken in a food processor.
Onions: We need finely chopped onions for this recipe. I did my chopping in the food processor and squeezed the chopped onion lightly between palm to remove excess water.
Ginger and Garlic: I chopped ginger and garlic too in the food processor separately. If chopped ginger is watery, squeeze it lightly too and discard the water.
Instructions for kabab casserole
You can cook these kababs a day ahead. Transfer the cooked kabab to a casserole dish and garnish with onion rings. Drizzle a few tablespoons of tamarind chutney, garlic raita, green chutney over the kabab. Cover the casserole with a foil and store it in the fridge for 12-18 hours. Just before serving preheat the oven to 250 F. Place kabab in fol in oven and heat for 15 -20 minutes until hot. Serve with raita and salads.
Freezing instructions
These kababs are freezer friendly. Just cook the kabab and the line it apart in a tray and freeze. Once the kababs are solid gather in a freezer bag and freeze for up to 2 months. You can eat defrost and reheat kabab in a pan.

Ingredients
  

  • 600 gr/ 21.16 oz chicken mince/ ground chicken.
  • 1 medium = 50 gr/ 1.76 oz onion.
  • 1 tsp garam masala.
  • 1 tsp garlic powder.
  • 1 tsp red chilli powder preferably Kashmiri red chilli powder.
  • 1 tsp salt I use Himalayan salt.
  • ½ tsp ginger powder.
  • 2 tbsp plain flour/ all-purpose flour.
  • 2 tbsp yoghurt.
  • 2 handfuls of coriander leaves.

Instructions
 

  • Place the ground chicken/ chicken mince in a mixing bowl.
  • Peel and finely chop the onion. Add in the chicken.
  • Put the garam masala, garlic powder, red chilli powder, ginger powder, salt, plain flour and yoghurt into the chicken.
  • Chop the coriander leaves and add them in the chicken.
  • Mix and knead the chicken until everything is thoroughly combined and mixed. If you want, you can use a food processor to mix. Just give it a few blitzes until the mince is well mixed. Leave it to rest for at least half an hour.
  • Heat your griddle pan or oven grill.
  • Take about 2-3 tablespoons of the meat (around 50-60 gr/ 2 oz) and shape it into a cylinder tube around the prepared skewer.
  • Cook the chicken on the skewer in your oven grill or on the griddle pan. Try to rotate and turn the skewers every so often so the meat will be evenly cooked.

Notes

Give the chicken mixture at least 30 minutes to marinate. However, overnight is ideal.
Bamboo skewers should be soaked for a few hours before use. If you're using metal skewers, give them a light oiling before usage.

With delicately flavored chicken keema or chicken mince, Chicken Seekh Kabab is a tender, juicy, and delicate Chicken Kabab. These chicken skewers are an excellent party appetizer and are prepared quickly. They are simple to prepare on a griddle or tawa with just a few drops of oil.

Ingredients
  

  • 900 gms Chicken mince or chicken keema 2 pounds
  • 3 medium onions grated & squeezed
  • 1 cup roughly chopped cilantro Dhaniya patta
  • 3/4 cup bread crumbs
  • 1 tbsp Ginger Garlic Paste heaped
  • 1/2 tbsp Cumin Powder
  • 1/2 tbsp Coriander Powder
  • 1/2 tbsp Garam Masala Powder
  • 1 small egg
  • 1 tbsp lemon juice OPTIONAL I did not use any
  • 2 tbsp Extra Virgin Olive Oil or any oil
  • Salt to taste

Instructions
 

  • Grate the onions first & squeeze out the juice completely. You may do it easily with the help of a sieve or sifter & a spoon. Place the grated onion on the sieve and press with the spoon to drain out the juice.
  • Add all the ingredients in a dry bowl and mix gently working with the help of your fingers. DO NOT knead or over mix.
  • Take one skewer at a time from the water you soaked them in. And skewer the meat all the way up to the tip of the skewer stopping at about 1"-2" from the tip. Refer the pic.
  • Gently press the meat with the help of your fingers and give it a cylindrical shape all around the skewer. Set aside. Repeat this step until you are done skewering the meat in the skewers.
  • Brush oil on a griddle or tawa and set it over medium heat. Place the skewered meat along with the skewers on the tawa or griddle and cook until golden on all sides. Rotate them from time to time so that all the sides get cooked properly.
  • Serve hot. Enjoy!

Notes

After combining everything, if the chicken mince seems a little sticky, simply add additional bread crumbs. By teaspoonfuls.
As you shape the kababs, wet your hands. Your palm won't become stuck to them.
Before skewering the meat, soak the bamboo skewers in water for 10 to 15 minutes. They won't burn because of this.
Very IMPORTANT: Completely press the onion to extract all of the juice. Additionally, there must be no traces of water in the leaves of the cilantro.
You can cut this recipe in half, double it, or even triple it.
Adapt the spices to your preferences or taste. We don't use a lot of spices because we prefer Kababs with a mild flavor. We adore the meat's natural flavor.

Ingredients
  

  • Measuring cup used 1 cup = 250 ml, 1 tsp = 5 ml
  • 1 lb / approx 500 grams ground chicken
  • 1/2 cup finely chopped onion
  • 1 & 1/2 inch piece of ginger
  • 5-6 cloves of garlic
  • 3 green chillies adjust as per desired heat
  • 1/4 cup finely chopped cilantro leaves
  • 1 tbsp finely chopped mint leaves
  • 2-3 tbsp roasted gram flour
  • 1/4 cup breadcrumbs add more if required for binding
  • Dry spices
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala
  • 1 tsp amchur powder or 1 tbsp lemon juice
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1 tsp kasoori methi dried fenugreek leaves
  • 1/2 tsp black pepper powder
  • 1/4 tsp cloves powder
  • 1/2 tsp cardamom powder
  • 1 tsp salt or to taste
  • Other ingredients
  • Chaat masala as required to sprinkle on the cooked kebabs
  • Oil/butter as required for basting

Instructions
 

  • In a mixer/grinder, add ginger, garlic, and chillies, grind to a coarse paste without adding any water.
  • In a mixing bowl, add ground chicken. Pat dry with an absorbent kitchen napkin to remove any excess moisture.
  • To the ground chicken, add the freshly crushed ginger-garlic-green chilli paste, dry spices along with roasted gram flour.Also, add finely chopped onions, breadcrumbs, cilantro, and mint leaves. Mix well to incorporate the spices with the minced chicken, cover the bowl with a cling wrap and refrigerate for at least 1 hour.
  • Preheat the oven to 400 degrees F. Grease your palms with little oil. Take a handful of the kabab mixture and place it on a skewer. Press the kabab mixture around the skewer to shape it in the form of a long log. (If the mixture is falling apart, you can use some breadcrumbs for binding).
  • Transfer to a baking tray lined with aluminum foil. Place the kababs on a greased grilling rack. Or you can place it directly over the aluminum foil. Prepare the remaining kababs in the same manner, until all the mixture is used up.
  • Brush the kababs with oil or oil spray.
  • Grill the kababs in a preheated oven for about 20 minutes or until cooked through, turning once in between, basting with oil as required. I broiled it for another 2 minutes once they were done.
  • Or cook the seekh kababs on a tawa/grill/griddle pan, turning them in between a couple of times, until they are cooked through. Baste with oil in between. Serve hot with cilantro-mint chutney, onion rings, lime juice and a dash of chaat masala. Enjoy!!

Notes

Remember to soak wooden skewers in water for an hour before using them to avoid burning them when grilling.

Ingredients
  

  • 500 g chicken mince keema
  • 1 large onion roughly chopped
  • 5-6 cloves garlic
  • inch ginger roughly chopped
  • ½ cup coriander leaves roughly chopped
  • ½ cup mint leaves roughly chopped
  • 4-5 fresh chilis roughly chopped
  • 1 tsp red chili flakes
  • 1 tbsp cumin seeds crushed
  • 1 tsp coriander seeds crushed
  • 2 tbsp gram flour besan
  • 2 tbsp chaat masala
  • 4-6 tbsp oil for cooking
  • salt to taste
  • Others
  • 1 bowl cold water

Instructions
 

  • Put all ingredients (except the oil) in a chopper/blender and blend it to a fine paste
  • Mix well and marinate in the fridge for anywhere between 2-8 hours
  • Remove and mix well. Take around 60g of the mince mixture and clump it on the top of your skewer (seekh)
  • Dip your palms in cold water and using your palm and fingers gently spread the mince mixture evenly around the skewer, to form a cylinder
  • Carefully remove the skewers and lay them on a plate
  • Heat your skillet with the oil and add the shaped chicken keema mixture
  • Cook on all side until well browned and then remove from flame
  • Sprinkle some chaat masala and serve your chicken seekh kebabs, hot, with lemon wedges and chutneys of your choice. Enjoy!

Notes
