  • 2 tsp brown sugar
  • tsp smoked paprika
  • 1 tsp oregano

  • ½ tsp cayenne pepper
  • For the Bourbon Street Chicken & Shrimp:
  • 1 pound boneless chicken breast
  • 1 pound tail-on shrimp peeled and deveined
  • 3 tbsp canola or olive oil divided
  • cup butter
  • 3 cloves garlic minced
  • ¾ cup low-sodium chicken stock or bone broth for extra protein

  • To make the Cajun seasoning, put all of the ingredients for the Cajun seasoning in a large bowl with a shallow rim.

  • You may use it right away, or you can cover it with plastic wrap and let it marinade in the refrigerator for up to 24 hours (the longer you let it marinate, the more fragrant it will be!)

  • ¼ cup unsalted butter divided ½ stick
  • 3 cloves garlic minced
  • Garlic butter for serving
  • Garlic mashed red potatoes for serving

  • Cajun spice, brown sugar, and salt should be mixed together in a small basin using a whisk. Set a plate and a large piece of aluminum foil aside.

  • 1/2 cup apple juice

  • 1/2 cup brown sugar
  • 1 tsp minced fresh ginger or 1/2 tsp ground ginger
  • Chicken
  • 2 lbs boneless skinless chicken breasts cubed or chicken thighs
  • 2 tbsp vegetable oil
  • 2 tsp garlic minced
  • 2 tbsp cornstarch

Instructions
 

  • Combine all of the ingredients for the sauce in a basin large enough to hold them: chicken broth, soy sauce, apple juice, cider vinegar, bourbon, ketchup, brown sugar, and ground ginger. Reserve.

Cornstarch: To prevent lumps from forming in the sauce, prepare a slurry out of the cornstarch and water before adding it. In place of cornstarch, you may use a combination of a quarter cup of flour and two tablespoons of water; however, you would need to use a very little whisk to prevent lumps from forming.
Preparation Ahead of Time: This meal may be prepared up to two days in advance and kept in the refrigerator in an airtight container (the flavor actually intensifies with time). You also have the option of freezing for up to one month.
