- After the first five minutes of rapid boiling, reduce the heat to a lower setting. It only needs to continue boiling; it doesn't need to simmer.
- Gizzards should be placed in a colander, cleaned with cold water, and allowed to air dry before use.
- Set aside the minced onion and garlic. Heat the oil, then carefully add the chicken gizzards. Reduce the heat to medium and fry for a few minutes. At this point, add the onion and garlic.
- Since the gizzards were cooked in salted water, you just need a small amount of salt or bouillon powder (you can also use herbs). Sauté until gizzards become brownish and onion and garlic begin to turn golden.
- Gizzards should be added to the bowl with the polenta after which it should be drizzled with a tablespoon of the oil used to sauté the gizzards.

Notes
For deep frying, I prefer to use canola or peanut oil.
