Ingredients
  

  • 1 pound chicken cut into 1 1/2 inch cubes
  • 1/4 cup plus 1 tablespoon all-purpose flour divided
  • to taste salt
  • to taste pepper
  • olive oil
  • 1 pound Italian sausage casing removed
  • 1 large onion diced
  • 1 red bell pepper seeded cut into 1 1/2 inch pieces
  • 1 green bell pepper seeded cut into 1 1/2 inch pieces
  • 16 ounces cremini mushrooms quartered
  • 4 large cloves garlic minced
  • 1 cup white wine
  • 2 cups chicken broth
  • 1/2 cup peppadew pepper brine
  • 1 russet potatoes 3/4 inch diced
  • 1 tablespoon Italian seasoning
  • 1 cup peppadew peppers cut in half
  • 2 tablespoons butter
  • 2 tablespoons parsley chopped

Instructions
 

  • Salt and pepper the chicken cubes well on both sides. In a shallow dish, add 1/4 cup All-Purpose flour and dredge the chicken pieces in the flour, brushing off any excess.
  • In a large Dutch oven or pan with high sides, heat 2 tablespoons of olive oil over medium heat, then brown both sides of the chicken that has been dusted with flour. Transfer to a dish and put aside.
  • Add the sausage to a pan and cook it over medium heat until it has just begun to brown. Remove the sausage off the chicken platter and put aside. Remove skillet from heat and drain off excess grease, leaving just enough to coat the pan's bottom.
  • Add onions, red pepper, green pepper, mushrooms, and garlic to the dish. Cook on medium for six to seven minutes. Add the remaining 1 tablespoon of flour to the pan and whisk regularly for one minute. Bring white wine to a boil after adding. Reduce heat and boil rapidly for approximately 5 minutes, or until the wine has reduced to a thick, syrupy consistency.
  • Add peppadew brine, chicken stock, russet potato, 2 teaspoons of salt, 1/2 teaspoon of pepper, Peppadew Peppers, and Italian seasoning. Bring to a boil, then decrease heat and simmer, covered, for 20 minutes, or until potatoes are just soft.
  • Stir in the butter, then add the chicken and sausage that have been browned, and simmer until the chicken and sausage are well cooked and the potatoes are slightly disintegrating at the edges. Serve over angel hair pasta that has been cooked. Serve with chopped parsley garnished on top.

  • 1 pound skinless boneless chicken breast halves - cut into cubes
  • 1 cup all-purpose flour
  • 4 tablespoons olive oil
  • 1 large onion diced
  • 1 pound Italian sausage cut into 1/2 inch pieces
  • 4 large potatoes
  • 1 cup white wine
  • 1 teaspoon distilled white vinegar
  • 1 cup water
  • 1 cup sliced hot cherry peppers
  • 1 pound angel hair pasta

Instructions
 

  • Coat chicken cubes with flour. Heat 2 tablespoons olive oil in a large pan over medium heat. Saute chicken in oil till golden. Set aside.
  • In a Dutch oven, thoroughly sauté the chopped onion and Italian sausage in the remaining 2 tablespoons of olive oil. Stir in chicken.
  • Meanwhile, cook potatoes in the microwave until tender (but not mushy) and dice (with or without the skin). Stir into mixture of chicken and sausage.
  • Combine white wine, vinegar, and water in a medium basin. Pour into the sausage mixture and simmer over medium-low heat until the sauce thickens. Add hot cherry peppers and simmer until desired spiciness is achieved (the longer the peppers are cooked, the hotter the meal becomes!).
  • Meanwhile, make pasta al dente in a big pot of boiling water. Drain. Serve spaghetti with chicken and sausage.

  • 16 ounces of cremini mushrooms stems removed and sliced
  • 1 clove garlic chopped
  • 1 medium onion cut into slices
  • 1 red bell pepper
  • 1 green pepper
  • 1 cup fresh diced tomatoes or canned diced tomatoes
  • 1/2 cup chopped pepperoncini
  • 1/4 cup of brine of pepperoncini

Instructions
 

  • Prepare all of the ingredients, including chopping the potatoes into small pieces. Prepare the mushrooms, onions, and peppers by cleaning and slicing them. Chop the garlic cloves. The pepperoncini are sliced, and the brine is measured.
  • In a pan over medium to high heat, brown the sausage links before slicing them and placing them on a paper towel to drain.
  • Cook the chicken for five to eight minutes per side, or until it begins to become golden brown.
  • Remove the chicken from the pan and set it and the sausage aside.
  • Next, add the onions and garlic and sauté until softened and beginning to brown, then remove them from the pan and finish frying each veggie individually. If you have a big skillet, you can cook twice as many vegetables at once. Make cautious not to overcrowd the pan.
  • Once all of the veggies have been sautéed, clean the pan or get a new, clean pan.
  • The chicken and sausage should be cut into bite-sized pieces and returned to the skillet before adding the sautéed vegetables.
  • The meat and veggies are topped with pepperoncini rings, tomato dice, and brine.
  • Cover the skillet and bake for 45 minutes.

Notes

Chicken Murphy in a Crock-Pot:
After browning the ingredients, place them in a slow cooker for two hours on low heat.
This dish requires around 40 to 50 minutes to brown each item, then a further 45 minutes in the oven.
I prefer to sauté the ingredients individually in a skillet before putting them in a casserole dish, so that the pan is not overcrowded with veggies. If you are pressed for time or have a big pan, you may brown the vegetable items in whatever order you like.

  • 4 Italian sausages 2 hot, 2 sweet or your choice
  • 1 red bell pepper seeded and cut into 2-inch dice
  • 1 poblano seeded and cut into 1 inch dice
  • 4 oz container of king oyster mushrooms split and cut into 1” pieces
  • 1 Spanish onion medium dice, about 1 cup
  • 4 garlic cloves sliced thinly
  • ½ cup peppadew peppers quartered
  • ½ cup pepperoncini sliced thin (reserve brine)
  • ½ cup pepperoncini brine
  • 1 pound baby red bliss potatoes cut in half
  • ½ cup chicken stock
  • 2 Tbsp Jersey Italian blend

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit.
  • The chicken chunks are salted and peppered.
  • In a big saucepan or Dutch oven, heat the oil over medium heat. (refer to the recipe notes for the one-pan variation)
  • Brown the chicken in batches, starting with the skin-side down, for approximately 5 minutes per side.
  • Transfer the chicken to a dish.
  • Add the whole sausage and cook for 3 to 4 minutes, or until browned.
  • Remove with a slotted spoon, then cut into 1-inch pieces.
  • In the remaining oil and rendered sausage fat, cook the bell peppers, poblano, onion, mushrooms, and garlic until tender and beginning to brown.
  • Return the sausage to the saucepan and add the pepperoncini brine, cherry peppers, potatoes, chicken broth, and Jersey Italian seasoning. Mix gently, then transfer the contents of the saucepan to a roasting pan.
  • Place the chicken within the veggies and sausage and roast in the oven until the chicken is fully cooked and the sauce has reached the desired consistency, around 30 minutes. season to taste with salt and pepper.
  • Serve alone or with toasted bread, orzo, or pastina.

Notes

To make this recipe a one-pan supper, use an oven-safe, heavy-bottomed skillet or Dutch oven and move it directly from the burner to the oven rather than moving it to the roasting pan. The pan or pot should have a capacity of around four quarts, like this one, which we use frequently to prepare an abundance of simple, tasty, and visually appealing dishes.
