Instructions
- Prepare a 450°F oven. Grease a pizza pan lightly. The pizza dough should be divided into four pieces. Each piece is rolled into a rectangle that is 11 inches long and 8 inches wide.
- Mix all the filling ingredients except the mozzarella cheese, Parmesan cheese, and Caesar dressing (1/2 cup mozzarella, 1/3 cup Parmesan, 3 tablespoons Caesar). Spread one cup of filling along the middle of each dough disc.
- Pinch the seams together and roll up the jelly roll manner.
- Brush the tops of the prepared chicken bakes with the dressing and cheeses that were set aside. Put the rack in the bottom of the oven and bake for 20 minutes.
Notes
I like to roughly cut the precooked chicken breasts before using them. Cut some of the larger pieces of Perdue chicken breasts out of the package.
Change out the Caesar dressing for some creamy ranch dressing.
Putting chicken in the freezer If baking, stick to the specified directions, but cut the baking time in half to 10 minutes. Once the chicken bakes are cool, cover them individually in foil and store them in the freezer. To reheat from frozen, bake in a preheated 400°F oven for 35-40 minutes, or heat in the microwave on high for 4 minutes.

- Turn the oven temperature up to 350 degrees.
- In a microwave-safe bowl, combine the cream cheese and mozzarella cheese, using 2 oz of the cream cheese. Cook for one minute in the microwave. Stir. Put in the microwave for thirty seconds. Stir. The cheese should now be completely melted. Continue to microwave for another 30 seconds, or until a uniform gloop forms (it should look like cheese fondue at this point). Egg and baking mix should be combined. To fully integrate the ingredients, you can either drop it onto wax paper and knead it by hand, or use the dough blade of your food processor.
- In a broad rectangle on a sheet of parchment paper, press or roll out the dough. Wet hands or the top parchment sheet can be useful here. Prepare three equal-sized rectangles from the dough.
- The filling components should be mixed together. The filling should be split between them. Gently press the seams together as you draw the edges up and around the filling. Use the egg white as a glaze and top with parmesan.
- For a crisp and golden crust, bake on a pizza stone for 40 to 50 minutes.
