  • 4 boneless skinless chicken breasts thinly sliced*

  • 2 tablespoons olive oil
  • 1 1/2 cups sliced mushrooms
  • 1/2 cup Marsala wine** see note
  • 1/2 cup chicken broth
  • 1 cup heavy whipping cream
  • 1 teaspoon ground mustard
  • 1 teaspoon garlic powder
  • Fresh Chopped Parsley for garnish

Instructions
 

  • Add 1 tablespoon of olive oil to a large skillet set over medium heat. Add a little salt and pepper and the chicken. Cook until evenly done and gently browned. Take the chicken out and place it on a plate.
  • The mushrooms should be sautéed in 1 tablespoon of olive oil for 1-2 minutes. For 1-2 minutes, add the marsala wine and bring to a boil over medium-high heat. The alcohol can burn out as a result. Garlic powder, ground mustard, heavy whipping cream, and chicken stock should all be added.
  • Until it begins to thicken, simmer for about 10 minutes after bringing to a boil. Re-add the chicken to the sauce and cook for an additional 1-2 minutes.

Notes

Although the alcohol will burn out during the cooking process, you can use this as a substitute if you're hesitant to use wine: 2 T Sherry Vinegar, 1 T Vanilla Extract, and 1/4 cup white grape juice.

  • 1 8-oz package pre-sliced bella or button mushrooms
  • 3 tablespoons finely chopped shallots from 1 medium shallot
  • 2 cloves garlic minced
  • cup chicken broth
  • cup dry Marsala wine
  • cup heavy cream
  • 2 teaspoons chopped fresh thyme
  • 2 tablespoons chopped fresh Italian parsley for serving (optional)

Instructions
 

  • In a ziplock bag, combine the flour, 14 teaspoon pepper, and 34 teaspoon salt. Add the chicken to the bag, then shake to coat the chicken thoroughly. Place aside.
  • In a big skillet, heat the oil and 2 tablespoons of butter over medium-high heat. (For the best browning, use a stainless steel pan. Nonstick will also work, but the chicken won't have that lovely golden hue.) Shake off any excess flour before adding the flour-dusted chicken to the pan. Cook the chicken for 5 to 6 minutes, flipping it once, or until it is golden and just barely cooked through. Put the chicken on a platter and reserve.
  • In the pan, melt the final tablespoon of butter. Add the mushrooms and simmer for 3 to 4 minutes, stirring often, or until the mushrooms start to brown. Add the shallots, garlic, and 1/4 tsp. salt and sauté for a further 1 to 2 minutes. Use a wooden spoon to scrape any brown bits from the pan into the liquid before adding the broth, Marsala, heavy cream, thyme, 14 teaspoon salt, and 18 teaspoon pepper. You want a thin cream sauce; the liquid won't begin to thicken until the very end of the cooking time. Bring the liquid to a boil, then decrease the heat to medium and gently simmer, uncovered, for 10 to 15 minutes, or until the sauce has reduced by approximately half, slightly thickened, and darkened in color. Re-add the chicken to the pan along with any accumulated juices from the plate. Turn down the heat to low and simmer for 2 to 3 minutes, or until the chicken is thoroughly warmed through. If using, top with parsley before serving.

Notes

It is better to first chop huge chicken breasts horizontally to create four flat fillets, then pound them to an even 14-inch thickness if they are enormous (like the ones in the images, which weigh about 34 lb apiece). Large chicken breasts will become enormous if you pound them without first cutting them in half. The only disadvantage is that they will lose their original shape, but that is not a big deal! You could also pound them thin first and then cut them in half vertically.

  • 8 ounces mushrooms white or brown

  • ½ cup Marsala wine

  • Pound chicken until it is 14" thick; if it is very huge, cut it in two. Add salt and pepper, then coat with flour.
  • Over medium-high heat, warm the olive oil in a large pan. Cook the chicken in batches for 3 to 4 minutes on each side, or until well done. Chicken is removed and placed on a platter.
