  • 8 boneless skinless chicken thighs
  • Kosher salt and freshly ground black pepper to taste
  • 2 large eggs
  • 1/4 cup milk
  • 1 1/2 cups Panko*
  • 1 teaspoon smoked paprika
  • 1/4 cup vegetable oil
  • 1 cup all-purpose flour
  • 2 tablespoons chopped fresh parsley leaves
  • FOR THE HONEY MUSTARD GLAZE
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon mustard
  • 1 tablespoon Dijon mustard

Instructions
 

  • Prepare the oven by heating it to 375 degrees F. Prepare a baking sheet by lining it with parchment paper or a baking mat made of silicone; then set it aside.
  • To prepare the honey mustard glaze, combine the mayonnaise, honey, and mustards in a small dish and whisk until smooth. Set the glaze aside.
  • Add salt and pepper to taste before seasoning the chicken thighs with them.
  • Eggs and milk should be mixed together in a large bowl using a whisk. Panko, paprika, and vegetable oil should be combined in a second big bowl. After that, season the mixture with salt and pepper to taste.
  • Start with one piece of chicken at a time and dredge it in flour, then dip it in the egg mixture, and last dredge it in the Panko mixture, pressing to coat it.
  • Arrange the chicken in a single layer on the baking sheet that has been prepared, and bake it for 35 to 40 minutes, or until the crust is golden brown and the chicken is cooked all the way through.
  • Immediately serve with honey mustard glaze, and if preferred, top with chopped parsley for garnish.

Notes

You may get panko in the department of your local grocery store that is dedicated to Asian foods. Panko is a breadcrumb that is made in the Japanese way.

Ingredients
  

  • 8 chicken thighs bone-in, skin-on you can use chicken breast, see the tips in the post above
  • 6 tablespoon Dijon mustard
  • 1 tablespoon whole grain Dijon mustard
  • 2 tablespoon butter
  • 5 tablespoon Crème fraîche see my substitution tips in the post above
  • 1 c chicken broth
  • 10-15 fresh thyme sprigs
  • 1 bay leaf
  • 1 small onion sliced
  • 1 small shallot sliced
  • 2 tablespoon parsley chopped
  • ¾ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Turn the oven temperature up to 350 degrees F.
  • Salt and pepper the chicken, then massage it all over with both kinds of mustard.
  • Butter should be melted over medium-high heat in a large pan or Dutch oven that is ovenproof. After adding the chicken, brown it on both sides for around four to five minutes per side. The chicken should now be placed on a platter.
  • Add the shallot and onion to the same pan, and then sauté them for approximately five minutes, or until the shallot and onion become translucent.
  • Pour in the chicken stock and use a wooden spoon to scrape the browned pieces from the bottom of the pan.
  • The mixture should be brought to a boil once the thyme and bay leaves have been added.
  • After stirring in the crème fraiche, place the chicken breasts back into the pan.
  • Cook the chicken uncovered in the oven for 50 to 60 minutes, or until it is no longer pink in the centre and has reached an internal temperature of 165 degrees.
  • Sprinkle some chopped parsley on top, and serve at once!

In a resealable bag of gallon size, mix the flour, seasoned salt, garlic powder, and onion powder by shaking the bag until everything is evenly distributed. 7. Place two pieces of chicken at a time into the bag and shake it to evenly distribute the coating. Repeat the process with the remaining pieces of chicken. 8. Preheat the oil in a big saucepan, Dutch oven, or fryer to 375 degrees Fahrenheit. 9. Place the chicken, one or two pieces at a time, into the oil that has been heated until it is very hot. 10.
