Why do people use mustard when frying chicken?

Mustard (with salt) mimics the effects of buttermilk by being acidic enough to tenderize the meat while imparting flavor.

Can we deep fry chicken in mustard oil?

Fried chicken wings are coated in mustard and flour and then fried till crisp, then seasoned with a light blend of spices. Even while a heavy skillet can be used in a pinch, I highly recommend using a deep fryer for the crispiest possible chicken. The chicken is delicious.

Also interesting about Mustard Fried Chicken Recipe:

Why do you need buttermilk for fried chicken?

Why is it beneficial to marinate chicken in buttermilk? Because of the little acidity in buttermilk, it is able to tenderize the chicken without making it rubbery. Buttermilk makes the chicken more tender and flaky after being dredged in flour.

What does putting mustard on meat do?

Mustard is a meat tenderizer.

You won’t taste much mustard, but the thin coating you see on the meat’s surface is there to help tenderize it. In fact, mustard can aid in creating the coveted crust associated with classic barbeque.
