  • 2 pounds cut up Chicken Pieces choose the pieces you like, bone-in or boneless, your choice
  • 1 tablespoon fresh Garlic peeled and mashed into a paste.
  • 1 tablespoon Cumin
  • 1/2 teaspoon Salt to taste
  • 1/4 teaspoon freshly ground Black Pepper to taste
  • 1/4 teaspoon White Pepper to taste
  • 1 teaspoon dried Oregano
  • 4 cups Sour Orange/Bitter Orange Juice or 2 cups each Orange and Lime Juices
  • 1 cup Pineapple Juice
  • 1 Jalapeño Pepper seeded and minced
  • 1 tablespoon fresh Cilantro Leaves chopped

Instructions
 

  • Arrange the chicken pieces in a single layer on a cutting board or work surface.
  • Garlic paste should be rubbed into the chicken all over.
  • Cumin, salt, black pepper, white pepper, and oregano should all be mixed together in a small basin. Combine thoroughly.
  • The chicken pieces should be covered in the spice mixture. Chicken should be covered with spices until they are thoroughly and uniformly distributed.
  • Orange juice and pineapple juice should be combined in a big plate that has a shallow depth.
  • Add minced jalapeño. Mix
  • Add chicken to marinade. To fully coat the chicken pieces, turn the chicken over.
  • Dish should be refrigerated after being covered and chilled. Marinate the chicken for at least four hours or overnight (overnight is preferable), shaking or tossing it up regularly to ensure that it is uniformly coated with the marinade. Marinating the chicken overnight is preferable.
  • Cooking
  • Get the grill ready for some cooking.
  • Take the chicken out of the marinade and set it so that any excess may drip out.
  • The remaining marinade should be poured into a cup and then brought to the grill.
  • After placing the chicken on the grill, roast it while basting it with the marinade until it is done. After the final coating, chicken should be cooked all the way through. Do not baste the food after it has been cooked. Throw away any marinade that is still left behind.
  • Rice and black beans should be served alongside.

Instructions
 

  • Mix up all the ingredients except for the chicken into a large bowl.
  • After giving it a thorough whisking, set aside a quarter cup of the marinade in a portable container.
  • Add the chicken to the bowl and cover with plastic wrap.
  • Marinate for a full 24 hours.
  • Preheat your oven to 425 degrees.
  • In a cast iron grill pan add the chicken skin side up.
  • Prepare in the oven for twenty-five minutes.
  • Place the pan on the stovetop over a medium-high heat setting using the potholders.
  • Spray some foil with canola oil spray and put sprayed side down over the top of the chicken.
  • Press onto the meat with either a bacon press, a foil wrapped brick or a second heavy pan (I used my normal cast iron skillet on top of the chicken.
  • Spoon half the reserved marinade over the chicken while it cooks.
  • Cook for another 3 minutes then remove the bacon press/brick, turn chicken (apply some more marinade) and cook a final three minutes before dishing.

Notes

Yellow food coloring is an essential component of the original recipe. If you still want to include it in your dish, the appropriate amount to do so is six drops.

  • In a big pan with a shallow depth, mix together the oil, butter, onion powder, garlic powder, cumin, and lemon juice. Add the chicken halves and coat them thoroughly by flipping them over. Marinate for a few hours or overnight, covered in the refrigerator.
  • Take the chicken out of the marinade and cook it over medium coals on a barbecue grill or at a distance of 4 inches from the heat source under the broiler. Continue to flip the chicken and baste it often for approximately half an hour, or until the meat is cooked through.
  • The chicken breast halves should be cut into pieces before being served with either corn or flour tortillas, beans and rice, and salsa, if preferred. Makes 6 servings.

  • Put the vinegar, garlic, oregano, salt, pepper, and jalapeño pepper in a bowl and thoroughly combine the ingredients. Combine the juice of one pineapple with the juice of half a lime. Combine thoroughly.
  • Marinate the chicken by placing it in a big resealable bag or shallow dish and then coating it with the marinade. Marinate the meat by letting it sit in the refrigerator for at least one full night.
  • Put the oil and chicken in a pan that can go in the oven and preheat the oven to 425 degrees. Throw away what is left of the marinade. Before placing the meat in the oven, brown it on both sides. Bake for about 25 minutes, or until the chicken is no longer pink.
  • Add some chopped parsley as a garnish.

  • Grilling Tongs
  • Meat Thermometer
  • 12-inch Non-Stick Skillet

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 bottle Lawrys Baja Chipotle Marinade or Lawrys Mesquite Marinade
  • 3 Tbsp vegetable oil
  • 1 cup uncooked long grain rice not instant
  • 1 Tbsp dried minced onion flakes
  • 1 tsp garlic salt
  • 1 tsp Southwestern or Taco seasoning
  • 2 cups chicken broth
  • ½ cup tomato sauce
  • 1 container refrigerated white Mexican Queso I used Gordos Cheese Dip
  • 1 chopped tomato

Instructions
 

  • After coating the chicken with Lawry's Baja Chipotle Marinade, place it in the refrigerator to marinate for at least half an hour and up to a full day. When ready, cook chicken on a grill until it is done (165 degrees).
  • While the chicken is being grilled, you should get the rice ready.
  • Rice should be added to the oil in the big saucepan while it is heating up over medium heat. Cook while stirring often until the mixture becomes brown and puffy. Sprinkle the rice with salt and whatever Southwestern or taco flavor you choose while it is cooking.
  • Add the onion flakes, tomato sauce, and chicken broth, and bring to a boil. Stir in the onion flakes. Turn the heat down to a low setting, cover the pot, and let it simmer for 20 to 25 minutes. Use a fork to fluff the mixture.
  • Warm the cheese dip in accordance with the instructions on the package, then put it aside.
  • To make a Pollo Loco, start by placing a quarter portion of the rice on a dish and topping it with grilled chicken. On top of the chicken and rice, drizzle two to three tablespoons of cheese dip and sprinkle the dish with chopped tomatoes.

Notes

You may prepare the chicken on the stovetop or in the oven if you do not have access to a barbecue or if the weather is not conducive to firing up the grill. Cook the chicken breasts in a pan over medium-high heat for three to four minutes per side. Put the chicken on a baking sheet, and continue cooking it at 425 degrees Fahrenheit for another ten minutes.
