- You can forego brining the chicken if you're running low on time, and the end product will still be satisfying.
- Get the smoker up to a temperature of 250 degrees Fahrenheit. Put some apple wood chips, or any other kind of wood chips you choose, into the smoker.
- Take the chicken out of the brine and blot it dry with paper towels. Place the chicken's wings beneath its body, then use kitchen twine to bind the chicken's legs together.

- Kosher Salt or Sea Salt

- After being washed, the chicken should be placed in a big basin. Cover with a salty liquid (salted water - the water should have the approximate saltiness of sea water). Put it in the refrigerator for at least a few hours or as long as overnight.
- Take the chicken out of the brine and dry it off. Add some salt and pepper to the chicken and let it sit. Truss if desired (click here for trussing instructions).
- Charcoal gray in color If you are using a side smoker box, position the lighted charcoal adjacent to the side vent door (which should be the farthest away from the grill), and then stack the unlit charcoal heading towards the grill (not on top of the already lit charcoal). Allow the temperature of the smoker to rise to between 275 and 300 degrees Fahrenheit.
- After the chicken has been placed into the smoker, make sure the door is shut.
- While smoking, make periodic adjustments to the vents to maintain a cooking temperature of between 275 and 300 degrees Fahrenheit (less air to cool the temperature, more to increase the heat). If you are using briquettes (see the remark at the top of the page), put a handful of wood cuttings or chips on top of the lighted charcoal two or three times throughout the smoking process. (Be careful not to do this too frequently or the meat may end up tasting too smoky.) Once every hour (or once every hour and a half, which is typically excellent)
- It takes roughly three and a half hours to cook a chicken to a temperature of around 160-170 degrees Fahrenheit in the thickest portion of the breast flesh, however this time might vary substantially depending on your temperatures and the size of the chicken.
- Once it reaches the desired doneness, take the chicken from the smoker and let it sit for twenty minutes. After it has had time to rest, cut it and serve it.

- 4 Cloves Garlic

- 10 Pcs Peppercorns

- 1/2 Tsp Sea Salt

- 1 Whole Chicken
- 1 Bag Charcoal
- 1 or 2 Bags Smoking Wood Chips

- In a saucepan, combine the water, salt, peppercorns, and syrup before adding the mustard seeds. Bring everything to a boil and maintain the heat for as long as it takes for the salt to thoroughly dissolve.
- Let it chill in the refrigerator.
- Place your chicken in a big bag that can be sealed back up again. After the brine has cooled, add the beer, the onion, and the garlic.
- After pressing as much air as possible out of the bag, seal it and place it in the refrigerator for at least eight hours, but preferable for the entire night.
- Take the chicken out of the brine and pat it dry on the inside as well as the outside.
