Ingredients
- 2 cups all-purpose flour
- 2/3 tablespoon salt
- 1/2 tablespoon dried thyme leaves
- 1/2 tablespoon dried basil leaves
- 1/3 tablespoon dried oregano leaves
- 1 tablespoon celery salt
- 1 tablespoon ground black pepper
- 1 tablespoon dried mustard
- 3 tablespoons paprika original recipe calls for 4 tablespoons
- 2 tablespoons garlic salt
- 1 tablespoon ground ginger
- 3 tablespoons ground white pepper
- 2 teaspoons Accent Seasoning optional (I left this out)
- 1 cup buttermilk
- 1 large egg
- 1 chicken cut into 10 pieces (2 wings, 2 legs, 2 thighs and 2 breasts each cut in half to make 4 breast pieces)
- vegetable oil for frying
Instructions
- Put the herbs and spices in a little food processor and pulse until they're all around the same size and the thyme, basil, and oregano have disappeared.
- The flour, herbs, and spices should be combined in a bowl and whisked together.
- Whisk together the buttermilk and egg in a second, bigger basin.
- For 20-30 minutes, marinate the chicken in the buttermilk mixture.
- Take the chicken out of the buttermilk and drain off any excess.
- Coat the chicken in the flour mixture and brush off the excess.
- It needs to chill for 20 to 30 minutes on a baking sheet.
- To ensure that the chicken is completely immersed in the oil, use a deep fryer or a big pot that is at least 5 inches deep.
- Fry in groups of three or four for 15-18 minutes at 350 degrees.
- The chicken should be drained from the oil and placed on a drying rack set over a clean baking sheet.
- The paper or newspaper will trap the steam from the heat, making the chicken's underside nice and tender.

- Get the deep fryer up to temperature, preferably 350 degrees Fahrenheit. Completely incorporate all the components of the spice blend. Flour, brown sugar, and salt should be added to the spice blend.
- Lightly coat chicken with buttermilk. Put them in the flour mixture next. To ensure that the flour mixture adheres well to the chicken, turn the pieces over a few times.
- This process should be repeated with all of the chicken. Hold off on serving the chicken for 5 minutes to let the crust set.
- Chicken thighs need roughly 20 minutes in the fryer. When the internal temperature of a chicken piece registers 325 degrees Fahrenheit on a meat thermometer, it is done cooking.
- Once the chicken is done frying, remove it from the oil and place it on a paper towel to drain.
- Now, repeat the frying process, this time at 370 degrees Fahrenheit, until the chicken is a golden crisp all over.

- 2 cups buttermilk
- 2 cups flour
- 2 tbsp salt
- 2 tbsp pepper
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp basil
- 1 tbsp oregano
- 1 tbsp ground ginger
- 1 tbsp nutmeg
- Vegetable oil for frying
Instructions
- Put the chicken in a plastic bag and pour the buttermilk over it.
- Cool for two hours, rotating bag once.
- The dry ingredients should be placed in a separate plastic bag.
- Remove the chicken from the buttermilk and place it in a flour bag.
- Put the chicken in a large plastic bag and give it a good shake to coat each piece with the flour mixture.
- Put some oil in a large saucepan or skillet.
- Half of even the biggest piece of chicken should be submerged in oil.
- Pre-heat oil to 335 degrees F.
- Do not crowd the pan when frying the chicken; the initial batch should only include about four pieces.
- Cook for 8 minutes before flipping.
- Continue cooking for another 8 minutes.
- To serve, set on a wire rack.

- Chicken tenderloins should be thawed and soaked in milk. Leave for 20 minutes to an hour. Bring oven temperature up to 400 degrees. Place a few chunks of the half stick of butter in a 9x13 pan. Melt butter in pre-heated oven.
- Coat the base of the pan with melted butter. Spray the pan lightly to ensure there are no dry areas if doing so is required.
- Squeeze off any excess milk from the chicken and use the spice blend to coat each piece. The chicken may be coated by either shaking the bag or dipping each piece individually. Spread the chicken out in the pan.
- Time it for 20 minutes and see what happens. After 20 minutes, flip the chicken and cook for another 10 minutes. ENJOY!

Ingredients
- 200 g flour
- 1 tsp mustard powder
- 1 tsp ginger powder
- 3 tsp salt
- 1 tsp white pepper
- 2 tsp black pepper
- 2 tsp thyme
- ½ tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- For dredging
- 200 ml milk
- 2 tbsp lemon juice
- For the gravy
- 1 tbsp butter
- water boiled
Instructions
- In a pan, heat 1 cm of oil over medium heat while preheating the oven to 180 °C (Gas Mark 4).
- Whisk the lemon juice into the milk and set the dish aside.
- To a large bowl, add all the dry ingredients and mix thoroughly.
- One by one, coat the chicken in the dry flour mixture and then set it on the rack.
- Coat the chicken in the milk and lemon sauce (it should be nice and thick now, like cream)
- Remove the chicken from the bowl, brush off any excess liquid, then dredge it once more in the flour mixture before setting it back on the rack.
- Repeat this process until every component is fully covered.
- If you're using a smaller pan, fry the chicken two or three at a time until it begins to color (approximately two to three minutes each side) and transfer it back to the rack.
- Turn the baking pan over halfway through the 30 minute baking time to ensure even cooking.
- In the sauce
- Remove as much oil as possible from the pan without discarding the browned flour mixture that has settled to the bottom.
- Turn the stove down to low and melt the butter.
- When the butter has melted, take the pan off the heat and put in 1 to 2 tablespoons of the flour mixture, stirring constantly.
- 4 minutes total time, 30 seconds on the stove and 30 seconds off (it keeps the flour from burning)
- Remove the pan from the heat and, while swirling continually, add newly boiling water in increments until the gravy reaches the desired consistency.
- Adjust the heat under the gravy so it stays warm until the chicken is ready.
- Serve
