Airline chicken is a food dish composed of a boneless chicken breast with the drumette attached. Because of the requirement for meals to be prepared in advance for air travel, airlines back in the day developed a particular cut of chicken breast that wouldn't dry up as quickly.

Ingredients
  

  • 1 whole chicken
  • 1 drizzle olive oil
  • kosher salt to taste
  • ground black pepper to taste
  • 2 pinches herbes de Provence or to taste
  • ¼ teaspoon cayenne pepper or to taste
  • 1 tablespoon olive oil
  • 3 tablespoons butter divided
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • ½ cup chicken stock or to taste

Instructions
 

  • First, you need to halve each chicken wing by slicing through the junction where the wing joins the drumette. Cut through the fold of flesh that is between the thighs and the chest. Separate the breasts by making a shallow cut along the breast bone and two deep cuts on either side.
  • Step 2: Carefully cut each breast away from the carcass by inserting the knife's tip into the meat and pressing the blade against the bone. It is necessary to sever the wing from the breast by cutting through the cartilage.
  • Step 3 Take out the tenders and cut to size. Sprinkle with salt, pepper, herbes de Provence, and cayenne pepper, then drizzle with olive oil.
  • Fourth, remove the skin from the flesh by gently pushing your finger beneath the skin of each breast adjacent to the wing bone. Under the skin, in the middle, and with a smooth motion, place 1 tender. Using a salt shaker, liberally coat the chicken breasts.
  • Step 5 Preheat a skillet with 1 tablespoon of olive oil over medium heat. Chicken breasts, skin side down, should be added. The bottom should be browned after 6–7 minutes of cooking. Flip, then cook for another 7-10 minutes over medium heat until the meat is no longer pink inside. Season with 1 tbsp butter, rosemary, and thyme. Spread butter all over the chicken. Take off the chicken from the pan.
  • Sixth, add stock to the pan and turn the heat up high. Reduce by boiling for about 2 minutes, or until desired consistency is reached. Remove from heat and quickly stir in the remaining butter. After slicing the chicken breasts in thirds, serve them with the pan sauce.

Notes

Since the method is unaffected by the specific seasonings used, feel free to experiment with different combinations. To prepare the chicken in advance, just season it, wrap it in plastic wrap, and store it in the fridge.
Chicken is supposed to be cooked to 165 degrees F (74 degrees C), but I find that if I stop cooking it at 150 degrees F (66 degrees C), it turns out much more tender.

Instructions
 

  • The chicken legs should be dried using paper towels. Throw them into a basin of suitable size.
  • To make the spice, mix the paprika, Italian seasoning, brown sugar, and salt and pepper in a small bowl. Toss the chicken in a basin with the olive oil and the spices until the chicken is well coated.
  • Arrange the chicken thighs in the air fryer, skin side down. 10 minutes at 380 degrees. After 10 minutes, flip and continue cooking for another 7–8 minutes until no longer pink and internal temperature reaches 165 degrees.

  • 3/4 cup cornstarch or potato starch
  • 2 teaspoons kosher salt divided
  • 1 teaspoon paprika
  • 1 ½ teaspoons black pepper divided
  • 2 large eggs beaten

Instructions
 

  • Sprinkle 1 teaspoon of salt and 1/2 teaspoon of pepper over the chicken.
  • Combine the flour, cornstarch, remaining teaspoon of salt, remaining teaspoon of pepper, and paprika in a wide, shallow basin.
  • To ensure even coating, dredge each piece of chicken in the flour mixture, then dip it in the egg, and then dredge it once more in the flour mixture. Keep doing this until all of the chicken has been used.
  • Perforated parchment paper may be used to line the air fryer basket.
  • Wet the flour coating on the chicken by spraying or brushing it with oil.
  • Spread the coated chicken out in a single layer in the air fryer basket (over the liner) (you may have to cook the chicken in 2 batches).
  • Broil at 400 degrees for 8 minutes.
  • Fry the chicken for another 7 minutes at 400 degrees Fahrenheit after you've flipped it over and sprayed or brushed it with oil.

Notes

If you like, you may substitute all cornstarch or all flour instead. That's my go-to because it yields the perfect balance of crunch and browning.
