Chicken marsala (Italian: Scaloppine di pollo al Marsala) is an Italian-American dish of chicken escalopes in a Marsala wine sauce. It is a variation of traditional Italian scaloppina dishes, of which there are many varieties throughout Italy. The dish dates to the 19th century, when it may have originated with English families who lived in western Sicily, where Marsala wine is produced. Slices of chicken breast are coated in flour, briefly sautéed, and then removed from the pan, which is then used to make a Marsala reduction sauce. The sauce is made by reducing the wine to nearly the consistency of a syrup while adding garlic. The sauce is then poured over the chicken, which has been kept in a warming oven, and served immediately.
As an alternative method, the chicken breasts may be braised in a mixture of Marsala wine and butter.Wiki

3. Chicken Marsala

Chicken Marsala

The Chicken Marsala with its scrumptious creamy mushroom sauce can compete with any restaurant dish. One of the most popular dishes that can be ordered at restaurants may be prepared in a flash and with little effort right in your own home kitchen. An authentically flavorful Italian chicken supper with enough of sauce to pour over the sides and lots of flavorful chicken!

Total Time 35 mins
Servings 4 people

Ingredients

  • 1/2 cup all-purpose flour plain flour
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black cracked pepper
  • 2 large boneless skinless chicken breasts halved horizontally to make 4 fillets*
  • 2 tablespoons olive oil divided
  • 4 tablespoons unsalted butter divided
  • Marsala Sauce:
  • 1 tablespoon unsalted butter as needed
  • 8 ounces 250g brown or Cremini mushrooms, sliced
  • 4-5 cloves garlic minced
  • 3/4 cup dry Marsala wine
  • 1 1/4 cup low-sodium chicken broth or stock
  • 3/4 cup heavy cream thickened cream, evaporated milk or half and half may also be used**
  • 2 tablespoons fresh chopped parsley

Instructions

  • In a wide, shallow basin, combine the flour, salt, garlic powder, and black pepper. Coat the chicken in the flour mixture, then brush off any excess flour that remains.
  • A pan or skillet with a diameter of 12 inches should be heated over medium-high heat until shimmering before adding 1 tablespoon of oil and 2 tablespoons of butter. Fry two of the chicken breasts until golden brown on all sides. Repeat with the remaining chicken breasts (about 3 to 4 minutes per side). Place the meat on a heated platter, cover with foil, and continue to keep it warm.
  • Proceed in the same manner with the two chicken breasts that are left.
  • Melt one tablespoon of butter in the pan that the chicken was cooked in, which should still have some pan oil left over. After adding the mushrooms, cook them for two to three minutes, or until they have a browned appearance, while scraping the bottom of the pan to remove any residual chicken parts.
  • After adding the garlic, continue cooking it for approximately a minute, or until the aroma is released.
  • Marsala and the broth are poured in, and the sauce is let to simmer until it is reduced by half and begins to thicken (about 10-15 minutes).
  • After the cream has been added, place the chicken pieces back into the sauce. Keep cooking until the sauce becomes more viscous (about 3 minutes). Serve the dish immediately after garnishing with the chopped parsley. (Once removed from the heat, the sauce will continue to thicken.)
  • If preferred, serve on cooked angel hair pasta (or another type of cooked pasta of your choosing), rice, potatoes, cauliflower rice, or zucchini noodles.

Notes

*In order to use the method of crushing chicken breasts, you will need four chicken breasts (skinless and boneless). Put one chicken breast between two pieces of plastic wrap (or in a ziplock bag), then use the flat side of a meat mallet or a rolling pin to pound and flatten it to an equal thickness of a quarter of an inch. Put the chicken breast on a plate to the side and continue the process with the remaining breasts.

  • ½ cup flour
  • salt & pepper to taste
  • 4 tablespoons olive oil
  • sauce
  • 2 tablespoons butter
  • ¼ teaspoon thyme
  • 1 small shallot diced or onion

  • 1 ½ tablespoons flour

After adding the mushrooms, continue cooking for approximately 5 minutes, or until the juices flow. After stirring in the flour (one and a half tablespoons), continue cooking for another minute.
  • After adding the Marsala wine and the broth, continue to boil for about three minutes, or until the mixture has thickened and is bubbling.
  • Place the chicken back into the pan and simmer for another 2–3 minutes, or until it reaches the desired temperature.
  • After garnishing, spoon the sauce over the pasta.

What is chicken piccata sauce made of?

Can you explain Chicken Piccata to me? Simply dredging chicken breast cutlets in flour, browning them, and serving them with a sauce made of butter, lemon juice, capers, and either stock or white wine is all that goes into making chicken piccata.

What goes with chicken piccata?

The chicken piccata goes nicely with a wide variety of traditional side dishes. It is typically served with spaghetti at Italian-American restaurants. [Case in point:] Other mouthwatering alternatives include mashed potatoes, steamed broccoli, and fried rice. All three are excellent.
