  • 2 chicken breast grilled
  • 2 cup dry Marsala wine
  • 1 cup butter
  • 2 pinch salt
  • 2 pinch black pepper
  • 1 cup mushrooms sauteed

  • In a heated pan, combine the Marsala wine, salt, and pepper. Reduce the wine by around 70 percent.

Ingredients
  

  • 4 tablespoons butter
  • 4 boneless skinless chicken breast halves
  • 4 shallots chopped fine
  • 1/2 lb mushrooms sliced
  • 1/4 cup dry marsala
  • 1/2 cup heavy cream
  • 1 teaspoon lemon juice

Instructions
 

  • To achieve a uniform thickness throughout the chicken breasts, pound them lightly while seasoning them with salt and pepper.
  • Cook the chicken in a large pan with two tablespoons of heated butter until each side is nicely browned, approximately two minutes total. Take it out of the pan and put it to the side.
  • In the same pan in which you melted the remaining butter, add the shallots and the mushrooms. Cook the mushrooms until they acquire a light brown color.
  • After adding the Marsala, bring the mixture to a boil while scraping any browned pieces from the pan's bottom. After adding the cream and the lemon juice, bring the mixture back up to a boil. Add little salt and pepper before serving.
  • Place the chicken back in the pan and cover it with the lid. Let it simmer for another three minutes.
  • To accompany, fettuccine tossed with butter.

Ingredients
  

  • 1/2 cup all-purpose flour plain flour
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black cracked pepper
  • 2 large boneless skinless chicken breasts halved horizontally to make 4 fillets*
  • 2 tablespoons olive oil divided
  • 4 tablespoons unsalted butter divided
  • Marsala Sauce:
  • 1 tablespoon unsalted butter as needed
  • 8 ounces 250g brown or Cremini mushrooms, sliced
  • 4-5 cloves garlic minced
  • 3/4 cup dry Marsala wine
  • 1 1/4 cup low-sodium chicken broth or stock
  • 3/4 cup heavy cream thickened cream, evaporated milk or half and half may also be used**
  • 2 tablespoons fresh chopped parsley

Instructions
 

  • In a wide, shallow basin, combine the flour, salt, garlic powder, and black pepper. Coat the chicken in the flour mixture, then brush off any excess flour that remains.
  • A pan or skillet with a diameter of 12 inches should be heated over medium-high heat until shimmering before adding 1 tablespoon of oil and 2 tablespoons of butter. Fry two of the chicken breasts until golden brown on all sides. Repeat with the remaining chicken breasts (about 3 to 4 minutes per side). Place the meat on a heated platter, cover with foil, and continue to keep it warm.
  • Proceed in the same manner with the two chicken breasts that are left.
  • Melt one tablespoon of butter in the pan that the chicken was cooked in, which should still have some pan oil left over. After adding the mushrooms, cook them for two to three minutes, or until they have a browned appearance, while scraping the bottom of the pan to remove any residual chicken parts.
  • After adding the garlic, continue cooking it for approximately a minute, or until the aroma is released.
  • Marsala and the broth are poured in, and the sauce is let to simmer until it is reduced by half and begins to thicken (about 10-15 minutes).
  • After the cream has been added, place the chicken pieces back into the sauce. Keep cooking until the sauce becomes more viscous (about 3 minutes). Serve the dish immediately after garnishing with the chopped parsley. (Once removed from the heat, the sauce will continue to thicken.)
  • If preferred, serve on cooked angel hair pasta (or another type of cooked pasta of your choosing), rice, potatoes, cauliflower rice, or zucchini noodles.

Notes

*In order to use the method of crushing chicken breasts, you will need four chicken breasts (skinless and boneless). Put one chicken breast between two pieces of plastic wrap (or in a ziplock bag), then use the flat side of a meat mallet or a rolling pin to pound and flatten it to an equal thickness of a quarter of an inch. Put the chicken breast on a plate to the side and continue the process with the remaining breasts.

  • 4 chicken breasts boneless-skinless 5-6 oz each
  • ½ cup flour
  • salt & pepper to taste
  • 4 tablespoons olive oil
  • sauce
  • 2 tablespoons butter
  • ¼ teaspoon thyme
  • 1 small shallot diced or onion
  • 8 ounces mushrooms white or brown
  • 1 ½ tablespoons flour
  • ½ cup Marsala wine
  • ¾ cup chicken broth
  • 2 tablespoons parsley or chives for garnish

Instructions
 

  • Pound chicken until it is 1/4 inch thick; if it is particularly large, you may want to chop it in half first. After dredging in flour, season with salt and pepper and set aside.
  • In a large saucepan set over medium-high heat, preheat the olive oil. Cook the chicken in batches, giving it three to four minutes on each side, or until it is fully cooked. Take the chicken out of the oven and arrange it on a platter.
  • In the same pan, add the thyme, shallot, and 2 tablespoons of butter. About three minutes later, the vegetables should be soft. After adding the mushrooms, continue cooking for approximately 5 minutes, or until the juices flow. After stirring in the flour (one and a half tablespoons), continue cooking for another minute.
  • After adding the Marsala wine and the broth, continue to boil for about three minutes, or until the mixture has thickened and is bubbling.
  • Place the chicken back into the pan and simmer for another 2–3 minutes, or until it reaches the desired temperature.
  • After garnishing, spoon the sauce over the pasta.
