- 1 1/4 pounds ground chicken
- 1/2 white onion diced small

- 1/2 cup plain Greek yogurt
- 2 tablespoons vegetable oil
- 2 medium tomatoes cut into 1/4-inch slices
- 4 pitas
- 1/2 cup fresh mint leaves for serving
Instructions
- Salt and pepper the chicken after it has been mixed with the onion and parsley in a big bowl. Rub together with your hands until everything is evenly distributed. Make 8 round or oval patties from the ingredients.
- Cucumber and yogurt may be mixed with salt and pepper in a medium bowl. Oil should be heated over medium-high in a big skillet. Brown the patties on both sides and thoroughly cook them in the oven for 12 minutes. Split the burgers and tomatoes between the pitas. Cucumber yogurt sauce and mint are the finishing touches. To serve, fold to encompass.

- 500 g lamb mince
- 3 tbsp tikka curry paste
- 2 tbsp mango chutney
- 2 garlic cloves finely grated
- thumb-sized piece ginger finely grated
- 225 g Greek-style yogurt
- 1 ½ tbsp mint sauce
- 8 flatbreads
- 4 to matoes sliced
- 2 Little Gem lettuces shredded
Instructions
- Add the curry paste, mango chutney, garlic, and ginger to the lamb mince in a large bowl and stir to combine. Form into 20 round balls and season lightly. Prepare a large, oil-free frying pan over high heat; lamb mince is naturally rather greasy. The koftas should be cooked for two to three minutes at a time, in batches.
- Set oven temperature to 400F/200C/gas 6. Place the koftas on a baking sheet, and bake for 10 minutes; during the last five minutes of cooking, add the flatbreads. yogurt and mint sauce together. Wrap the koftas in a flatbread and serve with minty yogurt, tomato, and lettuce on the side.

How do you stop kofta from breaking?
Ensure the oil in the kadai/wok is heated enough before you start cooking. If they aren’t, the koftas may fall apart when dipped into the oil. It’s also possible for them to get stuck to the pan bottom when frying. So, check the temperature of the oil before you fry the koftas.
Why my koftas are hard?
Another cause of rough, dry koftas is overcooking. If you’d like to pan-fry the meatballs before adding them to the curry, do so only long enough to brown the outside. If possible, incorporate any liquid still present in the pan into the curry.

Ingredients
- For Chicken Meatballs aka Koftey
- 500 gm Chicken Boneless or Chicken Mince
- 4 to 5 whole green chilies more if needed
- 1 tsp garam masala powder
- 2 tsp all purpose flour
- 1 medium onion
- 1 tsp black pepper powder
- 1 tsp salt
- 1 1/2 tsp roasted and ground cumin
- 5 cloves of garlic
- 1 inch piece of ginger
- For White curry
- 3 tbsp ghee or butter
- Whole spices: 10 whole black pepper 5 cloves, 5 green cardamom, 2 black cardamom
- 1/3 cup almonds
- 2 1/2 cup milk
- 1 cup water
- 1 tsp all purpose flour maida
- 1 tbsp garlic ginger paste
- 2 tsp salt or to taste
- 1 tsp garam masala powder
- 1 tsp coriander powder
- 1/2 tsp green cardamom powder elaichi powder
- 1 tsp roasted and ground cumin
- 1 tsp black pepper powder
- 1 cup cream
- Garnish
- Green chilies slit open into half
- Ginger julienne cut
- Ghee
- Lemon
Instructions
- Prepare almonds by boiling them for 5-10 minutes. If the almonds aren't previously peeled, soak them in boiling water for 10 minutes; once the water has cooled, peel the nuts and place them in a food processor together with 1/2 cup of milk and all-purpose flour; pulse until you have a fine mixture. Take out of the way.
- Get out the pot you'll need to cook the curry in. The recipe calls for 2 tablespoons of ghee.
- Take the frozen meatballs out of storage and cook them in the ghee over a medium heat. Toss the meatballs in ghee so they can brown. About 2 minutes.
- Gather the meatballs onto a serving dish.
- In the ghee left in saucepan, add whole spices and garlic ginger paste. Keep cooking until the paste becomes a golden brown color.
- Saute for a minute with all the salt and spices. Then, after a minute of cooking, stir in the almond paste.
- Blend in the remaining milk.
- Place the meatballs back into the covered pot. Maintain a low simmer for 10 minutes with the meatballs.
- Take the cover off after 10 minutes and give the meatballs a good toss.
- Throw in some whipped cream after the meatballs have cooked for a couple minutes.
- Sprinkle some garam masala powder, garnish with ginger, chilies and dollop of ghee and wedges of lemon to sprinkle on top
- Serve with naan or roti or alfredo pasta.

Oven-baked Chicken Kofta Wraps
Ingredients
- Chicken Kofta
- 1 small yellow onion cut into 8 wedges
- 2 cups loosely packed fresh parsley
- 3 garlic cloves
- 1 pound ground chicken breast
- 1 pound ground chicken thigh
- 1 large egg
- 1½ teaspoons kosher salt
- ½ teaspoon paprika
- ½ teaspoon ground cumin
- ½ teaspoon allspice
- ½ teaspoon ground turmeric
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon cayenne pepper
- ¼ teaspoon ground cinnamon
- Lemon-Garlic Aioli
- ½ cup mayonnaise
- Grated zest of ½ lemon about 1 teaspoon
- 2 tablespoons fresh lemon juice from about 1 lemon
- 2 garlic cloves minced
- ¼ teaspoon kosher salt
- To Assemble
- 1 head butter lettuce
- 1 hothouse cucumber—peeled halved lengthwise and cut into thin slices
- 2 ripe tomatoes halved and thinly sliced
- ½ red onion thinly sliced (about 1 cup)
Instructions
- To begin, set the oven temperature to 375 degrees Fahrenheit and prepare the chicken kofta. Spread parchment paper out on two hefty baking sheets and set aside.
- Second, put the onion, parsley, and garlic in the jar of a food processor or blender and pulse until smooth. The onion and parsley should be processed until they are very finely chopped, nearly to a pulp. Throw everything into a strainer with a fine-mesh filter. With the back of a spoon, press down on the mixture to drain out any extra liquid.
- Chicken breast and thigh meat, an egg, salt, paprika, cumin, allspice, turmeric, black pepper, cayenne pepper, and cinnamon, all mixed together in a big basin. Place the onion and parsley combination in the bowl and start kneading the dough with your hands. After waiting a short time, it will thicken into a paste.
- Roll the dough into balls using a measuring spoon and a tablespoon and place them on the baking sheets, leaving about 1.5 inches between each ball. Use your moist hands to flatten the tops of the koftas and smooth out the sides, making homogeneous patties. (Using damp hands facilitates manipulation of the sticky, paste-like flesh.)
- Bake for 20-25 minutes, or until the kofta patties are golden brown and cooked through (when tested with a knife). Wraps should be assembled when the koftas have cooled significantly.
- In a separate bowl, mix together the mayonnaise, lemon zest, lemon juice, garlic, and salt to make the lemon-garlic aioli. Make sure everything is thoroughly mixed by stirring.
- The koftas are served in lettuce cups with cucumber, tomato, and red onion for garnish. Spread some of the garlicky lemon mayonnaise on top.
