Ingredients
  

  • 1 pound 450g chicken breast or thigh cut into cubes
  • 1/3 cup 80ml pineapple juice
  • 3 tbsp 40g of ketchup
  • 3 tbsp 40g of brown sugar
  • 2 tbsp of chili sauce
  • 1 tbsp of garlic powder
  • 1/2 tbsp salt
  • 1/2 tbsp black pepper
  • 1/3 cup 80ml of water
  • 1 tbsp oil

Instructions
 

  • Pineapple juice, ketchup, brown sugar, chili sauce, garlic powder, salt, and pepper should all be mixed together in a basin. Combine thoroughly.
  • Marinate the chicken in the mixture for at least four hours in the fridge, but ideally overnight.
  • Start a boil with the chicken and marinade in a pot. The next step is to add water and continue cooking until the meat is cooked and the liquid has evaporated.
  • Chicken should be sautéed in oil over medium heat until it is brown and caramelized.
  • Place on a platter and complement with rice, a fried egg, and some sliced pepper.

  • 1 tablespoon of oyster sauce
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper

Instructions
 

  • The Chicken Marination Process
  • Chicken breast, pineapple juice, brown sugar, oyster sauce, ketchup, and the rest of the ingredients should be mixed together in a plastic food container.

  • Mix pineapple juice, ketchup, brown sugar, garlic, salt, and achuete powder in a large bowl. Make sure everything is thoroughly mixed by stirring. Toss in the chicken and rub the meat to coat it completely. Cover and chill in the fridge for at least a day.
  • Transfer the chicken and any remaining marinade to a large skillet. Put on high heat until it boils, then turn it down to a simmer for about 2 minutes. Just add water until it reaches the desired level. When the liquid has been reduced by half and the chicken is done cooking, add the oil and stir gently.

  • Chicken thighs should be patted dry using paper towels and then put aside.

  • Mix the chicken, sugar, pineapple juice, salt, pepper, catsup, and annato powder in a large mixing dish. The meat and cure should be well combined by mixing them together.
  • Place the chicken and curing mixture in a sealed container or plastic bag. Put the meat in the fridge overnight to cure it.
  • Chicken tocino can be cooked in a skillet with at least four teaspoons of oil. Brown the tocino by frying it for at least three minutes per side in oil heated to medium.
