- Melt two tablespoons of butter in a Dutch oven or big saucepan set over medium heat, and then bring the oil to a high temperature. Brown the chicken on all sides. Pull the chicken out of the Dutch oven.
- Melt the two tablespoons of butter that are left in the Dutch oven, then add the carrots, celery, and onion. Cook for three minutes while stirring regularly.
