  • FOO YOUNG PANCAKES:
  • 6 large eggs
  • 1/2 cup chicken broth
  • 2 ounces shiitake mushrooms sliced in to thin strips
  • 1/4 cup bean sprouts
  • 1/4 red bell pepper sliced into thin strips
  • 1 stalk scallion finely chopped
  • 2 ounces cooked chicken finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon vegetable oil
  • FOO YOUNG SAUCE:
  • 1 cup chicken broth
  • 2 1/2 tablespoons soy sauce
  • 2 teaspoons rice vinegar
  • 2 teaspoons granulated sugar
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 teaspoon sesame oil
  • TOPPING:
  • 1 scallion finely chopped

Instructions
 

  • Chicken broth, mushrooms, bean sprouts, bell peppers, scallions, chicken, and garlic are all added to a bowl of whisked eggs. Stir everything together until it's fully coated. Set aside after seasoning with salt and pepper.
  • Making the sauce for the foo young: Combine all the sauce ingredients in a small pot and heat until boiling. Simmer for two minutes on low heat. Remove from heat and set aside.
  • The foo young pancakes should be cooked in a pan with vegetable oil over medium-high heat. Make 2-4 tiny pancakes at a time by adding small amounts of the egg mixture to the pan with a ladle. Cook two pancakes at a time on both sides for a few minutes until they are just beginning to brown. Till the entire mixture has been used, proceed in phases.
  • Pour the sauce over the pancakes after quickly warming it. Serve right away after adding scallions on the top.

Notes

If you choose to save some pancakes for later, keep the sauce and pancakes apart. Pancakes should be heated in the microwave for 30-45 seconds. Reheat the sauce in a pot with 1 tablespoon of cornstarch and 1 tablespoon of water to restore its sticky consistency.

  • 4 cups low-sodium chicken broth
  • 24 ounces cottage cheese small curd
  • 1 large egg beaten
  • 2 cups shredded mozzarella cheese divided

  • 4 cups cooked chicken chopped

  • Egg noodles should only be cooked for 1-2 minutes less than al dente in a big saucepan of boiling water. (When baked, the noodles will continue to cook.) Drain, give a cold water rinse, and then set aside. Set oven to 350 degrees Fahrenheit.
  • In a very large saucepan set over medium-high heat, melt the butter. Add the dried basil, flour, salt, and pepper. Cook for 1-2 minutes while stirring.
  • About a cup at a time, stir in chicken broth until sauce thickens, 5 to 10 minutes. Get rid of the heat.
  • Stir together cottage cheese, egg, 1 cup mozzarella cheese, and 1/2 cup parmesan cheese in a sizable mixing basin.
  • Stir together the chicken, noodles, and cheese mixture in the saucepan. If necessary, add more salt, pepper, or dried basil after tasting.
  • Put the mixture in a 9 x 13-inch baking dish (or you can bake it right in an oven-safe saucepan it is in). Add the rest of the mozzarella and parmesan cheese on top.
  • Bake for 30 to 40 minutes, uncovered, or until bubbling and browned on top. Prior to serving, let cool for 10 to 15 minutes..

Notes

Making in advance: You can prepare this dish up to 24 hours in advance. Noodles should be underdone. assemble, securely wrap in foil, and place in the fridge. Bake as indicated, but you might need to extend the baking time by 10-15 minutes.
To halt:
Noodles are only boiled for 4 minutes. Following the instructions, assemble, bake, and let cool.
For up to two months, wrap tightly in a double layer of aluminum foil and place in the freezer. When ready to consume, bake for 1 1/2 hours starting from frozen (still covered with foil.) Then remove the top and bake for a further 20 to 40 minutes, or until it is hot and bubbling.
